Cheesy Smashed Potatoes
These Cheesy Smashed Potatoes are such an easy side dish recipe and are always a hit. My favorite shortcut here is to poke a few holes into the potatoes and microwave them until they are mashable.
You can sprinkle just about any kind of cheese onto the roasted smashed potatoes, or customize them by adding other flavors or toppings.

Cheesy Smashed Potatoes Recipe Ingredients
- Potatoes - I like to use either Red Potatoes or fingerling potatoes. The key here is to use little potatoes that can be smashed.
- Butter - this will be melted with the oil.
- Avocado Oil - you can use avocado oil or any other kind of cooking oil.
- Garlic Salt - if you don't have garlic salt you can use half salt and half garlic powder.
- Shredded Cheese - I like to use cheddar or a fiesta blend.
- Bacon Bits - you can easily make bacon bits yourself, or buy premade bacon bits.
How to Make Smashed Potatoes with Cheese
- Microwave the potatoes. Wash the potatoes and prick each with a fork a couple times. Microwave all the potatoes on a plate for about 8-10 minutes or until they are fork tender.
- Smash and season the potatoes. Add the microwaved potatoes to a lightly greased baking dish. Use a potato masher to mash into approximately ยฝ" thick pieces. Melt the butter and oil and drizzle over the smashed potatoes. Sprinkle the garlic salt over the top.
- Bake. Bake in a preheated 400 degree oven for 30 minutes, or until the potatoes are golden. Add the cheese and bacon and bake for another 10 minutes, or until the cheese is melted and the bacon is a little crisp. Enjoy!
Tips for Making Garlic Smashed Potatoes
- Use small or fingerling potatoes.
- No need to peel the potatoes
- Be sure to put a couple of pokes in the potatoes before microwaving so they can release steam as they cook
- If you'd rather not microwave the little potatoes, you can boil them until you can prick them with a fork and the potato barley holds on to the fork. You want them just soft enough to smash with a potato masher.
- You can make these garlic smashed potatoes or add the cheese and bacon. Both are delicious!
- They are amazingly dipped in ranch dressing.

Had lots of those baby potatoes from Costco that I had to use up. Thanks for this yummy cheesy dish. We served it alongside eggs + veggies and it was the best veggie-filled meal. Can't wait to make these potatoes again.
