It can be tricky getting sweet potato fries to turn out great. You know, crispy on the outside and soft and chewy on the inside. I've gathered a few techniques that will help your fries turn out crispy and amazing every time.
The first step you may not have tried is the ice water trick. This will wash away any extra starch on your potatoes while keeping them beautiful while you're peeling and cutting up the rest of your potatoes.
The second method is to toss them in a little cornstarch before you drizzle oil on them. This is the best trick for getting that crispy on the outside sweet potato fries we all love.

The best part is, they only take a few minutes to throw together and there's no frying involved.

Dipping Sauce for Sweet Potato Fries
This Sweet Potato Fry Dipping Sauce is made with Adobo Chipotle peppers. It's spicy and loaded with flavor. It's the perfect combo when combined with these sweet oven-fried sweet potatoes.
It's made with creamy mayo and is loaded with spicy and just the right blend of seasonings to make this a knockout combo.

These sweet potato Fries are actually good for you. How often does that happen, something that's sweet and spicy, and crunchy and chewy and actually good for you?
Even the sweet potato dipping sauce, when made with homemade or paleo mayo, is something you can feed your family and feel really good about it.

How to Make Sweet Potato Fries
- Wash and peel your sweet potatoes.
- Cut into ⅓" slices. Cut your sweet potato in half lenght wise. Now cut the half into ⅓" slices. Cut those slices into ⅓" pieces too. Now you have fries! Continue with all of your sweet potatoes.
- Add your fries to a bowl of ice water. This will help with a couple things, A.) Your fries will stay bright and won't turn brown (oxidize) while you're cutting the rest of your potatoes. B.) It will rinse off some of the starch from the potato and helps it become more crispy when baking.
- Take your fries out of the water and pat dry with a towel. I like to lay them out on a kitchen towel on the counter for a few moments and pat them dry.
- Toss your sliced fries in cornstarch before you drizzle them with oil. Cornstarch is the secret ingredient here that will help your sweet potato fries become crispy.
- Add the fries to a baking sheet and drizzle them with avocado oil and seasonings. Use two pans if needed. Be sure not to overcrowd your fries. Give them room to crisp up on the edges.
- Bake in a 425 degree, preheated oven, for about 25 minutes.
Chipotle Sauce for Sweet Potato Fries
This recipe is super simple and one of the best dips for sweet potato fries! Here's a list of the ingredients...
- Mayo- You can use homemade or Paleo mayo if desired
- Cilantro- Fresh cilantro works best. Just wash it and roughly chop it before adding to the blender
- Olive Oil- This will thin out your mayo just a tad so the sauce is perfectly dippable.
- Garlic- fresh garlic is best
- Chipotle Peppers in Adobo Sauce- The kind you buy in the can just take 2 out. If you don't love a lot of heat in your sauce, scrape the seeds out of the peppers before adding them to the blender.
- Lime Juice- the juice of a fresh lime works best.

- 4 medium Sweet Potatoes
- 1 cup Cornstarch
- ⅛ cup Avocado Oil
- 2 teaspoon Cumin
- ½ teaspoon Salt
- ½ teaspoon pepper

- ½ cup Mayo can use Paleo Mayo
- ½ cup Cilantro Chopped
- 2 Tablespoons Olive OIl or Avocado Oil
- 1 clove Garlic
- 2 med Chipotle Peppers in Adobo Sauce from the can
- 1 med Lime juiced

How much cornstarch are we talking about--this part is rather vague?

Hi Barbara, we've updated the recipe to say 1 cup of cornstarch. It doesn't need to be exact - you can just toss some cornstarch into a small bowl, then toss your sliced sweet potato fries in it just to coat them. Hope that helps!
