This simple Nutella Cornflake Cookies recipe is perfect for the Nutella lover in your life. It's super easy and only takes about 10 minutes to whip these babies up.
The recipe is unique in that it a cornflake cookie recipe with marshmallows. Just a handful of marshmallows makes this Nutella recipe even better. It's a spin off recipe of both my peanut butter cornflake cookies and Nutella No Bake Cookies.
Cornflakes Nutella Cookies Ingredients
- Butter - you can use salted or unsalted butter - it's completely up to you.
- Sugar - you will need white granulated sugar for these cookies.
- Karo Syrup - use light Karo syrup or corn syrup.
- Nutella - you can use Nutella or any other kind of hazelnut spread.
- Mini Marshmallows - mini marshmallows melt the quickest, but you could also chop up larger marshmallows.
- Cornflakes - I recommend using plain Cornflakes for this recipe.
How to Make No Bake Nutella Cookies
- Boil the butter, syrup, and syrup. Melt the butter in a large, nonstick pot. Add the sugar and Karo syrup, then bring to a rapid boil and boil for 1 minute.
- Stir in the rest of the ingredients. After 1 minute, remove from the heat and add the marshmallows and Nutella. Stir until combined and completely melted, then add the cornflakes and gently stir until thoroughly mixed.
- Cool. Scoop about 2 tablespoon cookies onto a lightly greased baking sheet and allow to cool for at least 10 minutes, or until set. Enjoy!

If you donโt bring the sugar mixture to a complete boil for 1 full minute, the sugar will not reach a high enough temperature to โset.โ This can cause the cookies to be gooey and rather messy. Make sure to either set a timer or count to 60!
Tips for Making No Bake Nutella Cornflake Cookies
- Be sure you're ready to go with all of your ingredients. I like to pre-measure the ingredients and lay them out next to the stove.
- Boil the sugar mixture for 1 minute. If you like your cornflake cookies a little more sticky, knock that time down to 30 seconds.
- You can use any hazelnut chocolate spread for this recipe.
- Mini marshmallows work best for this recipe. If you love chunks of marshmallows in your cornflake cookies, don't melt the marshmallows all the way.
- You can drop in cookies onto parchment paper but it's easier to get the cookies off of a greased cookie sheet. Also, If you're feeling a little lazy with these no-bake cookies, just pour them onto a greased cookie sheet and then pull off chunks of a cookie as you eat it.

- Make Ahead: These can be made a day ahead of when you need them. They are best stored uncovered in a cool and dry place for up to 5 days.
- Room Temperature: No Bake Cookies are best if stored in an airtight container at room temperature. No bake cookies donโt freeze very well
