Easy No Bake Nutella Cheesecake

This no bake Nutella cheesecake recipe is so easy to make and comes together in just a few minutes.  It’s rich and creamy, light and fluffy, and filled with chocolate and Nutella.

The filling goes great with our buttery graham cracker crust, which can be either baked or frozen before adding the filling. You can also experiment with other crusts, like this Oreo Crust, Nilla Wafer Crust, or this spiced Gingersnap Crust.

Ingredients You Will Need

  • Pie Crust–You have several options for the crust with this cheesecake recipe. You can use Graham Cracker crust, or make a variation of that with a Chocolate Oreo Crust, Nilla Wafer Pie Crust, or Gingersnap Pie Crust.
  • Cream Cheese-– Make sure you set your cream cheese out about an hour before you make this cheesecake.  The no-bake cheesecake filling will come together much quicker if your cream cheese is at room temperature. 
  • Whipped Cream–Heavy whipping cream works great in this recipe.  Just pour your cold heavy cream into a bowl and beat for a few minutes until stiff peaks form.  
  • Powdered Sugar– this is preferred over granulated sugar.  It’s light and fluffy and will keep the texture smooth and creamy.
  • Nutella– The Nutella brand works great in this recipe but Costco Nutella is great, too. Pretty much any hazelnut spread will work in this recipe.

How to Make Nutella Cheesecake

  1. Make the graham cracker crumb mixture. In a food processor, grate or pulse cookies or graham crackers until they are crumbs. Transfer to a large mixing bowl and combine with the melted butter, sugar, and cinnamon. Mix well.
  2. Press into a pie plate. Press the mixture firmly into a 9″ pie plate or springform pan using a small flat cup or your hands.
  3. Bake or freeze. Bake in your preheated oven for 8 minutes, or freeze unbaked for 10- 60 minutes. If baking, allow to cool completely before adding the filling.
  4. Whip the heavy cream. In a bowl, whip the heavy cream until soft peaks form. Set aside.
  5. Make the nutella cheesecake filling. In an electric mixer with the paddle attachment, beat the room temperature cream cheese until fluffy. Add the powdered sugar and Nutella to the cream cheese and beat again until fluffy. Gently fold the whipped cream into the Nutella mixture, then pour into the prepared graham cracker crust.
  6. Chill. Refrigerate for 1 hour or until ready to serve. Enjoy!

Frequently Asked Questions

Why didn’t my no bake cheesecake set?

If your filling is still runny even after it has chilled, the most likely reason is that you didn’t whip the cream enough. Make sure to whip until soft peaks form. You may have also warmed the cream cheese too much. If you use a microwave to soften it, be sure to only heat enough to soften but not melt the cream cheese.

Can I make this ahead of time?

Yes! You can make this no bake cheesecake up to 24 hours in advance and let it chill in the fridge.

Can you freeze this cheesecake?

Yes! In fact, Nutella cheesecake even tastes good when it’s still slightly frozen. You can freeze the finished cheesecake for up to 1 month before you eat it. I recommend pulling it out to room temperature for about 30 minutes before you plan to eat it, or transfer to the fridge overnight.

Storing and Freezing

  • Refrigerator: store lightly covered in the fridge for up to 3 days.
  • Freezer: you can freeze no bake cheesecake for up to 1 month. It can also actually be served frozen, or let it come to room temperature for about 30 minutes first.

Graham Cracker Crust

  • cups graham cracker crumbs

No-Bake Nutella Cheesecake

  • 1 cup heavy whipping cream
  • 16 ounces cream cheese, room temperature
  • 1 cup powdered sugar
  • 1/2 cup Nutella

Instructions
 

  • In a food processor, grate or pulse cookies or graham crackers until they are crumbs. Transfer to a large mixing bowl and combine with the melted butter, sugar, and cinnamon. Mix well, then press the mixture firmly into a 9" pie plate or springform pan using a small flat cup or your hands.
  • Transfer to the freezer for at least 30 minutes while you make the filling.
  • In a bowl, whip the heavy cream until soft peaks form and set aside. In an electric mixer with the paddle attachment, beat the room temperature cream cheese until fluffy. Add the powdered sugar and Nutella to the cream cheese and beat again until fluffy. Gently fold the whipped cream into the Nutella mixture.
  • Remove the crust from the freezer and pour the Nutella cheesecake mixture into the crust. Refrigerate for 1 hour or until ready to serve. Enjoy!
