This chocolate chip Pizookie recipe is baked in a cast iron skillet, then served warm with vanilla ice cream and chocolate sauce. The center is gooey and soft, the edges are crispy, and it couldn’t be easier to make.

Similar to cookie bars, you won’t need to scoop and bake individual cookies which saves more time than you might think. I love to serve one large skillet cookie family style, but you can also bake these in mini skillets for individual portions.

Pizookie Recipe

If you’ve ever had the pleasure of eating a Pizookie from BJ’s Restaurant, you already know the pure joy of sinking your teeth into a warm and gooey chocolate chip cookie straight from the pan. This cast iron skillet cookie is just barely baked in the center and crispy around the edges, only made better by topping with a huge scoop of vanilla ice cream.

You can experiment with trying different flavors of chocolate chips, adding mix-ins like chopped nuts, or make it exactly like this recipe says. In no time, you’ll have a giant warm skillet cookie to share with friends and family.

Ingredients You’ll Need

  • Butter – the butter needs to be at room temperature so that it will cream properly with the sugars.
  • Sugars – this cookie recipe calls for both granulated sugar and light brown sugar because they both add different flavors and will create a slightly different texture.
  • Eggs – it’s best if the eggs are pulled out about 30 minutes ahead of time so that they don’t curdle the butter by shocking it.
  • Baking Powder and Baking Soda – these both help to keep the cookie soft and let it rise slightly in the oven.
  • Flour – all-purpose flour works great for cookies. If you want to try a gluten-free version, just substitute your favorite gluten-free flour!
  • Chocolate Chips – using a high quality chocolate chip really makes a difference. I love Guittard but any similar brand will taste great.

How to Make This Pizookie Recipe

  1. Mix the cookie dough. Cream the butter and sugars, then add the eggs, vanilla, and salt slowly. Whisk together the dry ingredients separately, then add to the butter mixture and mix on low. Once almost combined, add in the chocolate chips.
  2. Press into a skillet. Transfer the cookie dough to a lightly greased 10-12” cast iron skillet.
  3. Bake. Bake in a preheated 350 degree oven for about 25-35 minutes, or until the center is just barely set and the edges and top are light golden brown.
  4. Serve. Remove from the oven, cool for a few minutes, then serve with big scoops of vanilla ice cream and a drizzle of chocolate and caramel sauce. Enjoy!

Recipe Tips and Variations

  • Do not overbake this cookie! Part of what makes it so delicious is how gooey the cookie is in the center.
  • To make mini skillet cookies, just bake in mini skillets for more like 15-20 minutes.
  • Try out different flavors of chocolate chips, such as peanut butter chips, mint chocolate chips, or butterscotch chips.
  • If you want to get a head start, you can make the dough up to 3 days ahead of time

Frequently Asked Questions

What is a Pizookie?

The name “Pizookie” comes from combining “pizza” and “cookie” and refers to how the skillet cookie resembles a deep dish pizza. BJ’s restaurant created the name for this cast iron skillet cookie that is served warm, usually with vanilla ice cream and chocolate or caramel sauce.

What if I don’t have a cast iron pan?

No problem! Just bake in any oven-safe skillet or even just a 9” square baking dish. It won’t have quite the same crispy texture around the edges, but it will still taste delicious.

How do you store a skillet cookie?

Any leftover skillet cookie can be gently removed from the cast iron skillet and wrapped in plastic wrap or foil, or transferred to an airtight container. Store at room temperature for up to 3 days or in the fridge for up to 5 days. To reheat, either microwave or warm in a preheated oven.

Can you make this ahead of time?

You can make the chocolate chip cookie dough up to 3 days in advance and store it in the fridge. When you are ready to bake, pull out to room temperature for about 30 minutes, or until it is soft enough to press into your skillet.
