These no bake peanut butter oatmeal cookies are so simple and come together in just about 10 minutes. They’re full of gooey marshmallows, oats, and lots of peanut butter. I like to make them on Sunday evening before we start a movie or even before school if I’m running low on groceries and the kids need a treat for their lunches.

There are a few things that will help your no bake endeavors come off without a hitch.  I like to make mine in a nonstick pan because it helps keep your cookies from burning and also makes cleanup that much easier.

If you’re in a pinch and don’t have wax or parchment paper, a cookie sheet sprayed with nonstick spray works great, too.

How to Make No Bake Peanut Butter Cookies

  1. Cook the butter, milk, and sugar. In a non-stick pan, melt the butter.  Add the milk and sugar and bring to a boil.  Boil for 1 minute, then remove from the heat.
  2. Add the peanut butter and marshmallows.  Stir in the peanut butter and mini marshmallows.  Continue to stir until the marshmallows are melted.
  3. Add the oats and salt. Once the marshmallows are completely melted, stir in the oats and salt. Mix well.
  4. Portion the no bakes. Drop by the spoonful onto a baking sheet covered with parchment paper.
  5. Cool then serve. Allow the cookies to cool at room temperature. Serve immediately or store in an airtight container for 3 days at room temperature or up to 1 week in the fridge. Enjoy!

Recipe Variations To Try

  • Add 1/2 cup of coconut in place of 1/2 cup of oats
  • Add 1/4 cup cocoa powder to make them chocolate peanut butter
  • Switch out the peanut butter for almond butter or Nutella
  • Switch out the vanilla extract for almond extract or coconut extract
  • Add more marshmallows and don’t let them melt all the way so that you have marshmallow bits
