This no bake cheesecake recipe is made with cream cheese, whipped cream, powdered sugar, and flavored with a splash of vanilla. It’s a simple and easy, no-fail recipe everyone loves.

Key Ingredients

  • Butter – for the crust, you will need melted butter to mix with the graham crackers and sugar. Either salted or unsalted will work great – it’s up to you.
  • Graham Cracker Crumbs – you can make your own graham cracker crumbs or buy them pre crushed.
  • Heavy Whipping Cream – whipped cream is added to the whipped cream cheese to lighten it up. Make sure your heavy whipping cream is very cold when you go to whip it. 
  • Cream Cheese – your cream cheese needs to be quite soft in order to make the creamy lemon filling. You can either leave cream cheese at room temperature for at least 30 minutes or very gently warm it in the microwave for about 10 seconds at a time.
  • Powdered Sugar – powdered sugar sweetens the filling without adding any grittiness.

  1. Whip the cream. In a bowl, whip the heavy cream until soft peaks form. Set aside.
  2. Beat the cheesecake mixture. In an electric mixer with the beater attachment, beat cream cheese until fluffy. Add the powdered sugar and vanilla extract to the cream cheese. Beat again until fluffy.
  3. Fold in the whipped cream. Fold the whipped cream and cream cheese mixtures until light and fluffy.

Ingredients

Graham Cracker Crust

  • 6 tablespoons butter, melted
  • cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/8 teaspoon cinnamon

Cheesecake

  • cups heavy whipping cream
  • 16 ounces cream cheese, room temperature
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract

Instructions
 

  • Combine the melted butter, graham cracker crumbs, sugar, and cinnamon and mix well. Press the mixture firmly into a 9" pie plate or springform pan and store in the freezer for at least 1 hour.
  • Meanwhile, add the cold heavy cream to the bowl of a stand mixer and whip until soft peaks form. Transfer to another bowl and set aside.
  • In the same stand mixer bowl, add the softened cream cheese and beat until fluffy. Add the powdered sugar and vanilla extract to the cream cheese. Beat until fluffy again.
  • Gently fold in the whipped cream and mix until light and fluffy, then pour mixture into the prepared graham cracker crust.
  • Refrigerate for 2 hours, or until ready to serve. Enjoy!
