    Alice Springs Chicken (Outback Copycat)

    If you are an Outback Steakhouse fan and need a new way to cook chicken breasts, this Alice Springs Chicken copycat recipe is for you.  It starts with oven-baked or grilled chicken, topped with honey mustard sauce, sauteed mushrooms, bacon and cheese baked until the cheese is melty and golden brown.

    While this chicken dish has a few steps, many can be done ahead of time and none of them take very long.  You can easily make this recipe ahead of time, store in the fridge and bake the next day if needed.  Or, try one of our tips and tricks below for simple shortcuts that won’t sacrifice any flavor.

    Ingredients in Alice Springs Chicken Recipe

    • Chicken Breasts - try and choose medium-sized boneless, skinless chicken breasts for this dish.  You could also substitute boneless, skinless chicken thighs if you prefer darker meat.
    • Salt and Pepper - this is to season the chicken before oven-baking or grilling.
    • Bacon - use your favorite type of bacon.  If you want to save a bit of time, you can use precooked bacon and just cook the mushrooms in only butter.
    • Mushrooms - use button or cremini mushrooms, sliced about ⅓” thick.
    • Butter - you will use this to cook the mushrooms, along with a little reserved bacon grease.
    • Garlic - fresh minced garlic is cooked with the mushrooms.
    • Cheese - I like Colby Jack cheese for this recipe.  Otherwise Pepper Jack, cheddar or Monterey Jack cheese make great substitutes.
    • Parsley - you can finish the dish off with freshly chopped parsley.

    Honey Mustard Sauce

    • Mustard - this recipe calls for dijon mustard.  In a pinch, any type of mustard will work.
    • Honey - any type of honey will work for this recipe.
    • Mayonnaise - we suggest using full fat mayonnaise.  You can substitute a low fat variety, but the consistency will be a little different.
    • Garlic Powder and Onion Powder - these add a sweet onion and garlic flavor while keeping the sauce nice and creamy.

    How to Make this Copycat Alice Springs Chicken Recipe

    1. Cook the chicken breasts.  Either oven-bake or grill your chicken until the internal temperature reaches 165 degrees F, then set aside.
    2. Cook the bacon.  Meanwhile, heat a large cast iron skillet over medium heat and add the bacon.  Cook bacon until crispy, then remove and cool on paper towels. 
    3. Saute the mushrooms and garlic.  Use a paper towel to remove all but about 1 tablespoon of bacon grease from the skillet, then add the sliced mushrooms and cook over medium high heat until slightly golden.  Add the butter and minced garlic and cook until the garlic is transparent, or about 2-3 minutes.  Remove the mushroom and garlic mixture and place in a bowl.
    4. Make the honey mustard sauce.  To make the honey mustard sauce, combine the dijon mustard, honey, mayo, garlic powder and onion powder in a small bowl. Stir until combined.
    5. Assemble.  Place the cooked chicken breasts in a 9" x 13" baking dish, then spoon the honey mustard sauce evenly over the top.  Over the top of each piece of chicken breast, add a spoonful of mushrooms and a slice of cooked bacon, then sprinkle the shredded cheese evenly over the top.
    6. Bake.  Bake in the preheated 400 degree oven for about 12 minutes, or until the cheese is melted and golden brown on top.
    7. Serve.  Remove from the oven and top with fresh chopped parsley.  Serve immediately.  Enjoy!

    Tips and Tricks

    • For a super quick and easy version, use leftover pre-cooked chicken.  
    • If you want to make this ahead of time, you can fully assemble, cover and store in the fridge overnight.  The next day, pull it out of the fridge while you preheat the oven and bake as directed.
    • Rather than simply reheating the leftovers, try shredding the chicken and using it for quesadillas, burritos or even in salads.

    Frequently Asked Questions

    Why is it called Alice Springs Chicken?

    This chicken dish from Outback Steakhouse, an Australian-themed restaurant, is named after the town of Alice Springs in the Northern Territory of Australia. 

    Do I need to marinade the chicken first?

    This recipe doesn’t use a honey mustard marinade, but rather a honey mustard sauce.  You can either oven-bake or grill your chicken breasts ahead of time.  The honey mustard sauce is added just before baking along with the bacon, mushrooms and cheese.

    Can I make this without mushrooms?

    If you aren’t a huge fan of mushrooms, try using caramelized onions instead.  You could also substitute sauteed bell peppers.

    Can I make this ahead of time?

    Yes!  If you want to make this recipe ahead of time, you can prepare the entire thing, assemble, cover and store overnight in the fridge.  The next day, remove from the fridge while you preheat the oven and bake as directed. 

    Storing and Reheating

    • Refrigerator - store leftovers in an airtight container in the fridge for up to 3 days.
    • To reheat - single portions may be reheated in the microwave on high for 1-2 minutes.  Or, reheat in an oven preheated to 350 degrees for 20-30 minutes, or until warmed through.

    Ingredients

    Chicken Breasts

    • 6 medium Chicken Breasts *oven-baked or grilled
    • 1 teaspoon Salt
    • ½ teaspoon Pepper
    • 6 slices Bacon
    • 12 ounces Mushrooms sliced
    • 2 Tablespoons Butter
    • 1 Tablespoon Garlic minced
    • 1 ½ cups Colby Jack Cheese shredded
    • 1 Tablespoon Parsley fresh, chopped, for garnish

    Honey Mustard Sauce for Chicken

    • ¼ cup Dijon Mustard
    • ⅓ cup Honey
    • ¼ cup Mayonnaise
    • ½ teaspoon Garlic Powder
    • ½ teaspoon Onion Powder

    Instructions

    • Preheat the oven to 400 degrees F.
    • Spray a baking dish with nonstick cooking spray, then add the chicken breasts and season both sides with salt and pepper to taste. Put in the oven and roast for about 20-25 minutes, or until the internal temperature reaches 165 degrees F. (Alternatively, you can *grill them, or saute the chicken breasts in a pan until the internal temperature reaches 165 degrees). Remove the cooked chicken from the oven and set aside to rest.
    • Meanwhile, heat a large cast iron skillet over medium heat and add the bacon. Cook bacon until crispy, then remove and cool on paper towels.

    Notes

    *Baking Chicken

    1. Preheat oven to 400 degrees.
    2. Add chicken breasts to a 9 by 13" baking dish.  Salt and pepper both sides of the chicken breast. 
    3. Bake in a preheated 400 degree oven for about approximately 20 to 25 minutes or until the internal temperature reaches 165 degrees.

    Grilling Chicken

    1. Preheat grill (medium heat) to about 400 degrees.
    2. Salt and pepper both sides of the chicken breast.  Add chicken breasts to a preheated grill. 
    3. Cook chicken breast on each side for approximately 7  to 8 minutes or until the internal temperature, on the thickest part of the breast, reaches 165 degrees.

    Skillet Frying Chicken

    1. Preheat a large cast-iron skillet on medium heat.
    2. Salt and pepper both sides of the chicken breast.  Add chicken breasts to the cast iron skillet. 
    3. Cook chicken breast on each side for approximately  8 to 10 minutes or until the chicken is golden brown on each side and the internal temperature, on the thickest part of the breast, reaches 165 degrees.
