Honey Mustard Sauce

The “Sweet Baby Rays” honey mustard sauce is also a great shortcut for this recipe.

  • Mustard – this recipe calls for Dijon mustard.  In a pinch, any mustard will work.
  • Honey – any honey will work for this recipe.
  • Mayonnaise – we suggest using full-fat mayonnaise.  You can substitute a low-fat variety, but the consistency will be slightly different.
  • Garlic Powder and Onion Powder add a sweet onion and garlic flavor while keeping the sauce nice and creamy.

How to Make Alice Springs Chicken

  1. Cook the chicken breasts.  Either oven-bake or grill your chicken until the internal temperature reaches 165 degrees F, then set aside.
  2. Cook the bacon.  Meanwhile, heat a large cast iron skillet over medium heat and add the bacon.  Cook bacon until crispy, then remove and cool on paper towels. 
  3. Saute the mushrooms and garlic.  Use a paper towel to remove all but about 1 tablespoon of bacon grease from the skillet, then add the sliced mushrooms and cook over medium-high heat until slightly golden.  Add the butter and minced garlic and cook until the garlic is transparent, or about 2-3 minutes.  Remove the mushroom and garlic mixture and place in a bowl.
  4. Make the honey mustard sauce.  In a small bowl, combine the dijon mustard, honey, mayo, garlic powder, and onion powder to make the honey mustard sauce. Stir until combined.
  5. Assemble.  Place the cooked chicken breasts in a 9″ x 13″ baking dish, then spoon the honey mustard sauce evenly over the top.  Over the top of each piece of chicken breast, add a spoonful of mushrooms and a slice of cooked bacon, then sprinkle the shredded cheese evenly over the top.
  6. Bake.  Bake in the preheated 400-degree oven for about 12 minutes or until the cheese is melted and golden brown on top.

Ingredients

Chicken Breasts

  • 6 medium chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 slices bacon
  • 12 ounces mushrooms, sliced
  • 2 tablespoons butter
  • 1 tablespoon garlic, minced
  • 1 ½ cups Colby Jack cheese, shredded
  • 1 tablespoon parsley, fresh chopped, for garnish

Honey Mustard Sauce for Chicken

  • 1/4 cup Dijon mustard
  • 1/3 cup honey
  • 1/4 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions
 

  • Preheat the oven to 400 degrees F.
  • Spray a 9" x 13" baking dish with nonstick cooking spray, then add the chicken breasts and season both sides with salt and pepper. Put into your preheated oven and roast for about 20-25 minutes, or until the internal temperature reaches 165 degrees F. Remove the cooked chicken from the oven and set aside to rest.
  • Meanwhile, heat a large cast iron skillet over medium heat and add the bacon. Cook bacon until crispy, then remove and cool on paper towels.
