Slow Cooker Teriyaki Chicken

This crock pot version of teriyaki chicken has all of the flavors of your favorite takeout, but is so simple to make right at home. Steam some rice and veggies, add a side of fresh pineapple, and voila—dinner is ready!

I love to use boneless chicken thighs because they turn out super moist and flavorful. However, if you don’t have chicken thighs, chicken tenderloins or chicken breast will work well. The slow cooker makes things so easy—there’s no need to marinade and it does most of the work for you!

Key Ingredients

  • Chicken Thighs – I love how juicy chicken thighs get, but you can also use chicken tenderloins or chicken breasts.
  • Soy Sauce – regular or low sodium soy sauce will work great.
  • Green Onions – these should be thinly sliced.
  • Brown Sugar – this helps sweeten the teriyaki sauce.
  • Ginger Powder – ginger is a key flavor in teriyaki sauce. If you want a bit stronger of a flavor, you could use fresh minced ginger instead of powdered.
  • Garlic – fresh minced garlic has the best flavor.
  • Cornstarch slurry – mix equal parts cold water and cornstarch to make a slurry that will thicken the sauce.

How to Make Crock Pot Teriyaki Chicken

  1. Mix together the teriyaki sauce. In a large mixing bowl,  add the soy sauce, green onions, brown sugar, avocado oil, ginger powder, and minced garlic. Mix until combined. 
  2. Add ingredients to the slow cooker. Add the chicken thighs to the crock pot, then pour the teriyaki sauce over the chicken.
  3. Cook. Cover and cook on high for 3 hours or low for 6 hours.  To check for doneness, use a meat thermometer to make sure your chicken reaches 160 degrees Fahrenheit in the thickest spot. 
  4. Thicken the teriyaki sauce. To thicken the teriyaki sauce slightly, remove from the crockpot and transfer to a small saucepan. Heat over medium until it boils. In a separate bowl, combine the cold water and cornstarch and whisk well. Slowly add the slurry to the sauce and simmer until thickened.
  5. Serve. Serve teriyaki chicken thighs over rice or steamed veggies with the teriyaki sauce. Garnish with sliced green onions and sesame seeds. Enjoy!

Tips for Making Crockpot Teriyaki Chicken

  • This chicken recipe works great with chicken thighs, however, chicken tenderloin or chicken breast works great too.
  • The brand of soy sauce I recommend is Aloha Soy, low sodium
  • Chicken teriyaki recipe can be served over steamed rice or a vegetable stir-fry.  It’s amazing with fresh pineapple too!
  • Use a meat thermometer to make sure your chicken is cooked all the way through.

  • 4-5 medium Chicken Thighs
  • 1 cup soy sauce
  • 1/4 cup green onions, thinly sliced
  • 1/4 cup brown sugar
  • 4 tablespoons avocado oil

  • teaspoons garlic, minced
  • 1 tablespoon cold water
