Crispy Parmesan Fingerling Potatoes

There are a million reasons why this recipe for roasted fingerling potatoes gets made so often around our house.  Not only are they insanely quick and easy to prep, but the result is basically a grown up version of steak fries. 

This version includes a Parmesan crust that makes it basically impossible to stop popping them into your mouth. We’ll show you how to roast fingerling potatoes so that you get that crispy crust and tender insides that make roasted potatoes so delicious. 

We’ve also added serving suggestions, substitution ideas and tips to make sure you have the very best and tastiest results! These potatoes will fit right into just about any situation, whether as finger food or with a fork during your family dinner.

Key Ingredients

  • Fingerling Potatoes – leave the skins on, but be sure to wash them before slicing in half lengthwise.  You could also substitute Yukon gold or red potatoes. 
  • Avocado Oil – you’ll need some for coating the potatoes and some for greasing your baking sheet.  You can also use another type of cooking oil if you would like, such as olive oil or vegetable oil.
  • Spices – we like to use garlic powder, onion powder and Italian seasoning for this recipe.  You could also add in your favorite fresh or dried herbs.
  • Parmesan Cheese – freshly grated Parmesan cheese will work best.

How to Make Garlic Parmesan Fingerling Potatoes

  1. Toss potatoes in Parmesan coating. Place potatoes in a large bowl or a ziplock bag and drizzle them in 3 tablespoons of avocado oil. Toss the potatoes until evenly coated, then add the garlic powder, onion powder, Italian Seasoning, Parmesan cheese, salt and pepper.  Toss again until the potatoes are evenly coated.
  2. Bake. Remove potatoes from the bowl or ziplock bag onto a baking sheet covered with more cooking oil. Spread them into a single layer on the baking sheet and bake at 425 degrees for about 20 minutes, or until the edges of the potatoes begin to brown. Using a spatula, turn the potatoes and cook for another 15-20 minutes so the other side can brown.
  3. Serve. Once the potatoes are golden brown, remove from the oven and season with additional salt and pepper to taste. Serve immediately and enjoy!

How Long to Roast Fingerling Potatoes

This depends on the temperature you roast them at, the size and quantity of potatoes and each individual oven.  We can still provide rough guidelines to give you a general idea of how long it should take to roast your Parmesan Roasted Fingerling Potatoes:

400 degrees F: 40-45 minutes
425 degrees F: 35-40 minutes (our recommendation)
450 degrees F: 30-35 minutes

What are the Best Potatoes to Roast?

This is sort of a trick question.  The short answer is that any potatoes are the best to roast!  The long answer is that for this particular recipe, there are a few other thin skinned potatoes that we would recommend, besides fingerling potatoes.

Yukon Gold potatoes are a great option because they aren’t too starchy or too waxy.  Plus, they have an amazing creamy texture.

We have also made Parmesan Crusted Red Potatoes with red potatoes (sometimes called “new” potatoes).  You will often be able to find red potatoes either loose or in bags at the grocery store.  

Another fun variety to try are Purple Peruvian or blue potatoes.  They are similar to Yukon golds, but with a slightly less rich flavor and an intense purple color.

Recipe Tips

  • High heat.  We recommend 425 degrees.
  • Bake in a single layer.  If your potatoes are touching too closely, they’ll begin to steam and you won’t be able to get a nice roast on the potato skins.
  • Leave the skins on.  They add a ton of flavor and texture, and help them keep their shape.
  • Find similarly sized potatoes.  No two potatoes are exactly the same size!  However, it’s best to try and find potatoes that are roughly the same size so that they will roast evenly.

Ingredients

  • 3 pounds fingerling potatoes, washed and cut in half lengthwise
  • 1/3 cup avocado oil, (divided)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2/3 cup Parmesan cheese, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Preheat the oven to 425 degrees F.
  • Place potatoes in a large bowl and drizzle them with 3 tablespoons of avocado oil. Toss the potatoes until evenly coated, then add the garlic powder, onion powder, Italian Seasoning, Parmesan cheese, salt, and pepper.  Toss again until the potatoes are evenly coated. 
  • Grease a large baking sheet with the remaining avocado oil, spreading it evenly.  Remove potatoes from the bowl onto the prepared baking sheet, transferring as much of the seasoning from the inside of the bowl as possible.  Spread out the potatoes in a single layer on the baking sheet.
  • Bake in your preheated oven for about 20 minutes, or until the edges of the potatoes begin to brown. Using a spatula, turn the potatoes and cook for another 15-20 minutes so the other side can brown.
  • Once the potatoes are golden brown, remove from the oven and season with additional salt and pepper to taste. Serve immediately and enjoy!

Notes

Storing leftovers: store leftover potatoes in an airtight container in the fridge for up to 3 days.
Reheating: reheat in a preheated 350 degree oven for about 10 minutes, or until warm.
