Oreo Rice Krispie Treats

While there’s nothing quite like a classic Rice Krispie Treat, I think we can all agree that adding Oreos to a dessert is never a bad idea. In this case, it’s an excellent idea that only requires extra marshmallows and crushed Oreo cookies. These cookies and cream Rice Krispies are thick, gooey, and stuffed with chopped Oreo cookies. 

Just to be sure they weren’t even remotely dry, this recipe includes extra marshmallows. In about 30 minutes flat, you can have yourself a fun no-bake treat for a fun snack at home, school party, or potluck.

Key Ingredients

  • Salted Butter – I use salted butter for all of my Rice Krispies treats recipes because they really do benefit from that little extra salt. If you use unsalted butter, just add an extra pinch to the butter as it melts.
  • Mini Marshmallows – mini marshmallows melt much faster than regular marshmallows so this is a must. If you only have regular marshmallows, you can chop them up first. You will need to save about 2 cups to mix into dry cereal.
  • Vanilla Extract – don’t skip this! It adds so much flavor and balances things out.
  • Rice Krispies Cereal – while Rice Krispies are the classic, any kind of puffed rice cereal will work.
  • Oreos – make sure to use regular Oreos instead of double-stuffed. They have the perfect cream-to-cookie ratio for this recipe.

How to Make Oreo Rice Krispies

  1. Melt the butter and marshmallows. In a large saucepan, melt the butter and then add all but 2 cups of the mini marshmallows. Stir until almost completely melted and then add the vanilla.
  2. Add the dry cereal mixture. In a bowl, combine the Rice Krispies, crushed Oreos, and extra marshmallows. Fold this into the melted butter mixture.
  3. Press into a baking dish. Lightly spray a 9” x 13” baking dish with nonstick spray, then transfer the mixture and press down gently with your hands. 
  4. Cool. Allow to cool for at least 20 minutes in a cool dark place before cutting and serving. Enjoy!

Recipe Tips and Variations

  • If you like your Rice Krispie Treats thick and gooey, make them in a 9” x 9” pan instead!
  • Do not be tempted to try and cut them too early or they will fall apart. Make sure that they have a chance to cool completely.
  • Try drizzling with melted chocolate, or adding mini white chocolate chips into the dry cereal mixture.
  • Experiment with different Oreo flavors like Golden Oreos, peanut butter, and mint.
  • For a double chocolate twist, use Cocoa Krispies instead of Rice Krispies.

As long as they are stored in an airtight container at room temperature, these Oreo Krispie Treats should stay fresh for up to 3 days.

Why are my Rice Krispie Treats hard?

The most common reason for hard and dense Rice Krispie Treats is that the mixture was cooked either too hot or for too long. This cooks the sugar to a higher temperature and evaporates extra moisture, making them hard instead of soft and gooey. 

They can also get too dense if you press the mixture too firmly into the pan. You want it to hold together but not be pressed so hard that it feels like a brick!

Can I store these Rice Krispie Treats in the refrigerator?

Because of excess moisture in the fridge, I don’t recommend storing these there. Instead, store in an airtight container at room temperature, making sure they are in a cool and dark place.

Ingredients

  • 6 cups Rice Krispies cereal
  • 20 Oreo cookies, roughly chopped
  • 20 ounces mini marshmallows, (divided)
  • 1/4 cup salted butter
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Coat the inside of a 9" x 13" baking dish with butter or cooking spray and set aside.
  • In a large bowl, combine the Rice Krispies, chopped Oreos, and 2 cups of the mini marshmallows. Set aside.
  • In a large saucepan over medium heat, add the butter.  Once melted, add the remaining mini marshmallows. Stir until the marshmallows are almost completely melted. Remove from heat, then stir in the vanilla extract.
  • Add the Rice Krispies and Oreo mixture to the melted marshmallow mixture and mix gently using a wooden spoon or rubber spatula until combined.
  • Transfer the cereal mixture into the prepared baking dish. Using the back of a spoon, spread the mixture evenly into the dish, then either wet or spray your hands with nonstick cooking spray and pat down.
  • Cool for about 20 minutes, or until they hold their shape, then cut into 3" squares. Enjoy!
