Easy Rice Krispie Pops
Both kids and adults alike will love these easy peasy Rice Krispie Treats on a stick. Based off of our Rice Krispies Treat recipe, they take just a few additional steps to make but are oh-so-adorable. Decorate in red, white, and blue for the 4th of July, funfetti sprinkles for birthdays, orange for Halloween and so on.
You can turn it into an event by letting the little ones help cut out the shapes, dip, and decorate. Use any type of sprinkles that you want along with mini M&Ms, mini chocolate chips or whatever tiny candies you’d like. Adding a cake pop stick means less sticky fingers when decorating and eating, so let them have at it.
Key Ingredients
- Salted Butter - salted butter will give these such a great flavor, but if you prefer you can use unsalted. Do not try and use margarine, though, as the end result will not be right.
- Marshmallows - mini marshmallows melt much more easily so those are the ones we recommend. If you only have large marshmallows, chop them up first. Also be sure and use fresh marshmallows because they will give the finished treats a much better texture.
- Rice Krispies Treats Cereal - any brand of crispy, puffed rice cereal will work. You can also try other types of cereal to make these with, such as Fruity Pebbles, Froot Loops and Golden Grahams.
- Chocolate - use chocolate candy melts or any other kind of chocolate that you want to melt down to dip or drizzle onto the Rice Krispie Pops.
- Toppings - you can use all types of sprinkles, M&Ms, and little candies for decorating.
How to Make Rice Krispies Pops
- Melt the butter and marshmallows. In a large saucepan, melt butter on medium heat. Once melted, add the mini marshmallows and stir until the marshmallows are almost completely melted. Remove from heat, then stir in the vanilla extract.
- Stir in the Rice Krispies. Add the Rice Krispies and mix gently using a wooden spoon or rubber spatula until combined.
- Press into a baking dish. Transfer the cereal mixture into a 9”x13” baking dish that has been buttered. Using the back of a spoon, press the mixture evenly into the dish, then either wet or spray your hands with nonstick cooking spray so that the Rice Krispies Treats are about ¾-1" thick.
- Cool and cut shapes. Let cool at room temperature for about 20 minutes, or until they hold their shape. Once cooled, spray a cookie cutter with nonstick cooking spray and cut the Rice Krispies Treats into the desired shapes, stick a cake pop stick or popsicle stick into each Rice Krispies Treat Pop, and set aside.
- Decorate. Melt your chocolate in a microwave safe bowl then drizzle or dip the Rice Krispie Pops into the chocolate. Decorate with sprinkles, M&Ms or other candies as desired and let cool completely to allow the chocolate to set up.
- Serve. Serve or store in an airtight container at room temperature for up to 3 days. Enjoy!
Recipe Pops Variations
- Holidays. Create different Rice Krispie Pops depending on the holidays. In this example, we cut out star shapes and decorated with red, white, and blue sprinkles and candies for the 4th of July. You could easily make these into Halloween, Christmas, New Years, Valentines or Easter treats just by changing the shapes and decorations.
- Peanut Butter. Add about ½ cup of creamy peanut butter to the mixture after the marshmallows have completely melted. You could also use Nutella!
- Different Cereals. Try making these with Froot Loops, Cocoa Krispies, Chex, Kix or any other small and crispy cereal that you like.
Frequently Asked Questions
Rice Krispies are a bit like popcorn in that when rice is heated, it expands quickly which causes little pockets of air to form. When milk is added, it fills the little holes and causes some of the little caves to break, which makes little popping sounds.
The easiest chocolate to use for dipping or drizzling Rice Krispie Pops is chocolate candy melts. They can be easily microwaved and aren’t quite as finicky as regular chocolate. They come in different chocolate flavors so feel free to try more than one.
You can also melt semi-sweet chocolate, dark chocolate, milk chocolate or white chocolate in a microwave safe container for about 30 seconds at a time, mixing in between. Or, add chocolate to a bowl over a double boiler and melt while stirring to be sure the chocolate doesn’t burn.
Yes, you can actually freeze Rice Krispie Pops! It’s best to freeze them as soon as they have cooled down and any chocolate has solidified. Individually wrap each pop that you want to freeze in plastic wrap, then store them all in a large freezer bag for up to 1 months.
Storing Instructions
- Room Temperature: store Rice Krispies Pops in an airtight container for up to 3 days.
- Freezer: wrap each Rice Krispie Pop in plastic wrap, then transfer to a large freezer bag and store for up to 1 months.
