These Einkorn German Pancakes are fluffy, buttery, and so delicious. Because they are made with Einkorn flour, they are also far easier for your stomach to digest.
If you have never made German Pancakes, you may be surprised to see just how easy they are. Just add your ingredients to a blender, blend them up, let it rest, then bake.

Einkorn German Pancake Ingredients
- Eggs - any kind of large grade-A eggs will work great.
- Milk - if you're using regular flour, use ½ cup milk instead. Whole milk works great.
- Sugar - this recipe calls for regular white granulated sugar.
- Salt - sea salt works great.
- Vanilla Extract - pure vanilla extract has the best flavor.
- All-purpose Einkorn Flour - all-purpose einkorn flour is a great substitute for those with gluten intolerances. It's gentler on stomachs. The main difference when cooking with Einkorn flour is that you will need to let the batter rest for at least 20 minutes to give it time to absorb the moisture.
- Butter - you can use salted or unsalted butter. If you use salted, just reduce the salt slightly.
How to Make Einkorn Flour German Pancakes
- Preheat pan. As the oven preheats to 400 degrees, put the butter in an ungreased 9 by 13 pan and place in the oven, just until the butter is melted.
- Blend the batter. In a blender, add the eggs, milk, flour, salt, and vanilla and blend until smooth. Allow to rest for about 10-20 minutes.
- Bake. Pour the batter into the baking dish and place in the oven. Bake for 20 minutes or until the edges are golden and puffy.
- Serve immediately with your favorite syrup, jam, or a sprinkle of powdered sugar.
Frequently Asked Questions
In some einkorn recipes, you will notice a little difference but in this recipe, my family had no idea. If anything the flavor will be just a little richer, a little but of a nutty flavor.
Just remember when you're cooking with all-purpose Einkorn flour, you will need to reduce the liquid by about 25% or add additional flour. The Einkorn flour doesn't absorb moisture quite like regular flour.
Einkorn has just a little bit of a yellow tint to it but, in most cases, responds the same as regular all-purpose flour.
My favorite place to get it is from Einkorn.com. They can offer several different Einkorn products. The all-purpose flour is what I bake with most.
Tips for Making Einkorn Flour Pancakes:
- If you would like to make these pancakes with just regular all-purpose flour, increase the milk to ½ cup.
- Make sure to preheat the pan and oven before adding the batter.
- These German pancakes are best when served hot before they deflate.

- You can use a 9" by 13" baking dish, cupcake tins, a pie plate, or cast iron pan. This recipe works great just about any way!

These came out amazing! I only omitted the sugar because we have a sugar addiction and we are trying to eliminate it out of our diet, and I must say even without the sugar they came out great! I tried the German pancakes a while back with regular all purpose flour and I must say I love0 this recipe 100x more.
