Einkorn Cinnamon Breadsticks Ingredients
- Water - you will need to mix the yeast with warm water to activate it. It should be lukewarm, around 95-110 degrees F.
- Yeast - this recipe calls for active dry yeast which needs to be "proofed" in warm water along with a little sugar.
- Sugar - white granulated sugar works great, but you could also substitute honey or maple syrup.
- Avocado Oil - either avocado oil or another cooking oil will work great.
- Salt
- Einkorn Flour - you will need all-purpose Einkorn Flour to make these breadsticks. If can be a little tricky to find in stores but is easy to purchase online.
- Butter - the butter should be melted or incredibly soft so that you can spread it over the dough before adding the sugar.
- Brown Sugar - either light or dark brown sugar will work - it just depends on how deep of a molasses flavor that you want.
- Cinnamon - use your favorite type of ground cinnamon.
Vanilla Glaze
- Powdered Sugar - I like to use powdered sugar in glazes because it keeps a silky smooth texture.
- Milk - you may need to add a touch more milk to get the glaze to the right consistancy.
- Vanilla Extract - pure vanilla extract has the best flavor.
How to Make Cinnamon Breadsticks with Einkorn Flour
- Proof the yeast. In a stand mixer bowl, add the warm water, yeast, and sugar. Allow to sit for about 5 minutes, or until bubbly.
- Mix the dough. Add the avocado oil and about 3½ cups of Einkorn flour and mix on low for about 2 minutes. Add the last cup of flour about ¼ cup at a time, just until the dough pulls away from the sides of the bowl and isn't sticky (you want to add enough flour so your dough is firm enough to hold a shape but still soft).
- Let the dough rise. Gently place a kitchen towel or plastic wrap over the dough and let it rise for about 10 minutes.
- Roll and shape the breadsticks. Transfer the dough to a lightly floured surface and roll out into a rectangle that is about ⅓"-½" thick. Brush with melted butter, then sprinkle the brown sugar and cinnamon over the top. Cut into 1" strips and twist the breadsticks. Lay on a greased cookie sheet, then sprinkle again with ground cinnamon.
- Let the breadsticks rise again. Let sit for 10 more minutes or until double. (**Hack--put the baking sheet with the breadsticks in the oven for a minute to warm the pan up. Take the pan back out of the oven and continue to rise. It will help your breadsticks rise twice as fast if your pan is warm.)
- Bake. Bake in the preheated oven for about 15-18 minutes, or until golden.
- Make the vanilla glaze. While the Einkorn Cinnamon Breadsticks are baking, combine the powdered sugar, milk, and vanilla in a small bowl.
