Around the holidays, I love to whip out this easy crockpot recipe for cheesy potatoes. Not only does it save a little time, it also saves precious oven space.
This classic recipe uses a can of cream of mushroom soup to give the potatoes that signature flavor and creamy texture. - Shredded Potatoes: You can use the frozen hash browned potatoes in the supermarket freezer section. If you prefer to use real potatoes, you can certainly make this a cheesy potato casserole with real potatoes. Just shred the potatoes before adding them and allow 15 minutes of extra cooking time. Or, cut into ½” pieces and parboil, then add the diced potatoes to your mixture and make as directed.
- Shredded Cheese: Any blend of shredded cheddar cheese will work, or you could use pepper jack to add a little spice.
- Sour Cream: This adds extra creaminess and tart flavor. Full fat or low fat; either will work.
- Cream of Mushroom Soup: any brand will do. You can also use cream of chicken soup in a pinch.
- Onion: white or yellow onions work great. Caramelizing the onion makes all the difference and it’s worth the little bit of extra time. You can also use 1-2 teaspoons of onion powder in a pinch.
How to Make Cheesy Potatoes in Slow Cooker
- Spray your slow cooker with non-stick cooking spray.
- In a medium-sized saute pan, on medium heat, saute diced onions in butter. Sautee until the onions are soft, tender, and golden brown.
- In a large bowl, combine the hashbrowns potatoes, sauteed onions, sour cream, cream of mushroom soup, garlic salt, and half of the shredded cheese. Mix.
- Spray the slow cooker with non-stick cooking spray.
- Spread the potato mixture in the bottom of the slow cooker.
- Top the potatoes with remaining shredded cheese.
- Cook on low for about 4 hours or on high for 2.5-3 hours.

Ingredients
- 1 20 oz bag Shredded Potatoes frozen and pre-packaged work great
- 3 tablespoons Butter
- 1.5 cups Onion diced
- 2 cups Cheese (reserve ½ c for topping)
- 1 cup Sour Cream
- 1 10.5 oz can Cream of Mushroom Soup
- 2 teaspoon Garlic Salt
Instructions
- Spray the inside of your Slow Cooker with non-stick cooking spray.
- In a skillet, on medium heat, melt the butter and add the onions. Sautee the onions, on medium heat, until they are soft, tender and caramelized.
- In the slow cooker, add the shredded potatoes, caramelized onions, half of the shredded cheese, sour cream, cream of mushroom soup and the garlic salt. Stir until combined.
- Spread the ingredients in to the bottom of the slow cooker with a spoon and add the remaining ½ cup of shredded cheese.
- Cook on high for 2.5- 3 hours or low for 4-5 hours. Or until the cheese is melted and slightly golden. Let the potatoes cool for about 10 minutes before serving. Enjoy!

You could use cream of chicken soup too. However, I'm guessing he would never know there is cream of mushroom soup in them. It just adds a creaminess and also a meaty rich flavor. It doesn't have a strong mushroom flavor.

You may need to add an hour or so. Something that might helo is if you stir it half way through and then add a little more cheese on top. If you have that much in there it would help to distribute the hot potatoes throughout. Great idea though. I'm making potatoes for a crowd and I'm going to double mine too!

You bet! You can make them a day or two in advance. Just be sure to let the casserole dish come up to room tempreture before adding it to a hot oven. You can shatter a glass baking dish if it's cold and you insert it in a hot oven.
