Some recipes say to store the strawberries in the fridge but I find it's much better to store them at room tempreture, a cool room if possible. This will keep condensation from building up between the strawberries and the chocolate layer. If left to harden at room tempreture, it will probably take about an hour.
I like to add just a little coconut oil to my chocolate covered strawberries. I like to be able to bite into the strawberry and not have the chocolate layer crack and fall off. The very crispy and cracking chocolate is preferred in a lot of candy recipes but for this one, a little bit of "give" on the chocolate is desirable.
How to Dip Strawberries
- Wash and rinse the strawberries, lay them on a paper towel to air dry completely, 30-60 minutes at room temperature.
- Make a double boiler, place a pan on low heat with an inch of water and bring to a boil. Place a bowl (with the lid larger than the lip of the pot) on the simmering water.
- Place ⅔ chocolate in the bowl. Stir gently with a spatula for several minutes or until chocolate is melted. Remove the melted chocolate from the heat and add in ⅓ more chocolate and the coconut oil. Continue to gently stir until all the chocolate is melted. (It should have a shiny appearance and smooth consistency.)
- Set a sheet of parchment paper on a large baking tray.
- Dip each strawberry into the chocolate, gently shake the strawberry to remove the excess chocolate. Place the strawberry on the parchment-lined tray.
- If desired, add a contrasting kind of melted chocolate in a piping bag and drizzle the dipped strawberries.
- You can also dip the strawberries into chopped nuts, sprinkles, or shredded coconut, or any other topping of your choice and then set it back on the tray.
- Let the strawberries sit at room temperature for about one hour, until the chocolate firms. Serve and enjoy!
Tips For Dipping Strawberries
- Be sure the strawberries are completely dry before dipping (Or the chocolate will have steaks in it)
- Strawberries are best when they're at room tempreture before dipping.
- After dipping the strawberries, be sure to let the chocolate set at room tempreture. DO NOT put them in the fridge or they will build up condensation between the chocolate and strawberry layer.
- Use a piping bag to drizzle white chocolate or dark chocolate drizzle. It's much easier to get a uniform drizzle with a piping bag.
- For best results, dip the strawberries on the same day you're wanting to serve them.
Storing Chocolate Covered Strawberries
- Make-Ahead- These can be made up to 24 hours ahead of time but they will be best if served the same day they are made. Just be sure they are stored at room tempreture.
- Keep them stored in a cool place
- Store them in a covered but not sealed container. (If they're in an airtight container, they will build up condensation) Someplace like a cool garage is a great place to keep dipped strawberries.
