Mississippi Pork Roast

If you’re looking for a twist on the ‘ol classic pot roast, Mississippi pork roast is what you’re looking for.  This easy crock pot roast has a rich and flavorful sauce on it when it’s cooked and it truly couldn’t be easier.

You literally just add the pork roast, a few seasonings, and let it do its thang for 5-6 hours.  When you cook a pork roast in a crockpot, the connective tissue and fat have a chance to render slowly, keeping the moisture in and melting away any toughness in the meat.  The added seasonings give the pork roast a ton of flavor and add just the right amount of sauce.

Key Ingredients

  • Pork Roast – choose pork tenderloin, pork shoulder, or any other boneless pork roast. These will all cook well in a crock pot because the long cooking time breaks down the muscle tissues and makes it super tender.
  • Aus Ju Seasoning packet – you can find the one ounce packets of this in the grocery aisle with all the spices.
  • Ranch Dressing mix – this comes in one ounce packets and can usually be found in the same aisle as salad dressing.
  • Pepperoncini – you will need about 6 pepperoncini along with a couple tablespoons of the juice from the jar.
  • Butter – this helps to create a creamy and rich sauce as the pork cooks.

How to Make Mississippi Pork Roast

  1. Season the roast. Place your roast in a lightly sprayed crock pot. Sprinkle the ranch seasoning packet and au jus seasoning packet on the roast, add the pepperoncini with its liquid, and top with the butter.
  2. Cook. Cover and cook on high for 4-6 hours, or until you can easily shred the roast with two forks.
  3. Shred the pork. Shred the pork roast taking out any large pieces of fat or gristle. Spoon the sauce over the roast.
  4. Serve. Serve on mashed potatoes, a roll, or a pretzel bun. Enjoy.

Oven Instructions

  1. Season the roast. Place your roast in a large dutch oven. Sprinkle the ranch seasoning packet and au jus seasoning packet on the roast, add the pepperoncini with its liquid, and top with the butter.
  2. Cook. Cover the dutch oven with a lid and bake in a preheated 300 degree F oven for about 5-6 hours, or until it shreds easily with two forks.

Instant Pot Instructions

  1. Season the roast. Place your roast in your instant pot. Sprinkle the ranch seasoning packet and au jus seasoning packet on the roast, add the pepperoncini with its liquid, and top with the butter.
  2. Cook. Close the lid and turn the steam release valve to the “sealing” position. Press the pressure Cook Button and set the timer for 45 minutes. After the time has completed, allow your Instant Pot to naturally release the pressure (this will take about 20 minutes)

How to Serve Shredded Pork Roast

You have several meal options when your pork roast is fully cooked and can easily be shredded with two forks:

  • This recipe works great on homemade nachos. The meat adds so much flavor. I’d recommend adding a drizzle of BBQ sauce and a drizzle of southwest ranch dressing too.
  • You can make a pulled pork sandwich. After you have shredded the pork roast, Add a few ounces to your favorite kind of bun. Add a slice of cheddar or pepper jack cheese, sliced avocado or tomato, and a handful of lettuce.
  • Serve as a main course with some potatoes and steamed vegetables.
  • Fill a tortilla with this pulled pork and your favorite cheese before pan frying to make quesadillas.
  • Make a taco bowl by adding some ranch potatoes and topping with pulled pork and shredded cheese.

Ingredients

  • 3-5 pound pork roast
  • 6 large pepperoncini
  • 2 tablespoons pepperoncini juice
  • 1 ounce ranch seasoning mix
  • 1 ounce au jus seasoning mix
  • 3 tablespoons butter, cut into small pieces

Instructions
 

  • Spray your crockpot with nonstick cooking spray, then add the pork roast. Sprinkle with the ranch seasoning mix and au jus seasoning mix and rub into the roast.
  • Add the pepperoncini and 2 tablespoons of the liquid from the jar, then arrange the butter over the top.
  • Cover and cook on high for 4-6 hours, or until you can easily shred the roast with two forks.
  • Once cooked, remove the pork and shred with two forks, discarding any large pieces of fat or gristle. Return the shredded pork to the crock pot and mix it in with the sauce.
  • Serve over mashed potatoes, or on a roll or pretzel bun. Enjoy!

Storing instructions: let your pot roast cool completely, then store in an airtight container in the fridge for up to 1 week, or in the freezer for up to 2 months. Once you are ready to use, transfer to the fridge to thaw overnight.
Reheating: to reheat in the microwave, transfer to a microwave-safe container and reheat for about 30 seconds at a time on high until warm. To reheat on the stovetop, transfer to a pot with a little cooking liquid and heat over medium, stirring frequently, until warm.
