Easy Homemade Pesto Flatbread

This Pesto Flatbread Pizza recipe is so easy to throw together and hard to beat.  To make things quick and painless, I use Pillsbury refrigerated pizza dough along with store bought pesto. Pre-made pesto is a game-changer and fun to have in the fridge to spice up a grilled cheese sandwich or make this easy 3 cheese flatbread recipe.

Of course you can make flatbreads using homemade pizza dough and homemade pesto, but when you need dinner on the table quickly these hacks are a lifesaver. Another reason to love this recipe is that you can add all sorts of different topping combinations. This Pesto and Sausage Flatbread is another favorite.

Pesto Flatbread Ingredients

  • Flatbread- You can use a pre-made crust, Homemade pizza crust. or this Focaccia Bread Recipe works great!
  • Pesto-  I found the pesto I used at Costco.  The flavor is amazing and it’s so convenient too. Bonus, it stays fresh for about a month and is perfect for homemade pizza, french bread pizza, these homemade flatbread recipes, and also any kind of homemade pesto pasta.
  • Cheese– You can go crazy here.  Customize your flatbread with your favorite or a blend of your favorite cheeses.  Just about any combination is amazing. 
  • Vegetables– You can go crazy here too.  Caramelized onions, peppers, jalapeños, mushrooms, tomatoes, olives, and spinach are all good options. 
  • Spices- If you want to kick up the flavor in your flatbread, sprinkle just a bit of red pepper flakes, oregano, and sea salt on top.  

How to Make Pesto Flatbread

  1. Preheat oven to 400 degrees.
  2. Grease a large baking sheet and set aside.
  3. In a saute pan over medium high heat, add the olive oil and warm. Saute the onion and red pepper until tender and onion is transparent. Remove from the heat.
  4. Unroll the pizza dough and place onto your prepared baking sheet. Stretch and roll out slightly, then using the back of a spoon, spread pesto evenly over the top.
  5. Sprinkle the onion and pepper mixture on top of the pesto, then sprinkle the three cheeses, followed by the tomato slices, oregano, and salt to taste.
  6. Bake in your preheated oven for 18-20 minutes, or until the crust is golden brown and the cheese is melted.
  7. Remove from the oven and cool slightly before serving. Enjoy!

  • 1 tablespoon olive oil
  • 1/2 cup red onion, diced
  • 1/2 cup red pepper, diced
  • 1/2 cup Prepared Pesto
  • 1/3 cup feta cheese
  • 1 cup Mozzarella, shredded
  • 1/4 cup Parmesan cheese, shredded or grated
  • 1 large tomato, thinly sliced
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1 can Refrigerated Pizza Dough

Instructions
