The easy caramel sauce is made by boiling salted butter, brown sugar, whipping cream, and corn syrup together. From there, combine with melted marshmallows and crispy cereal for a grownup take on the treat we all know and love.

Ingredients You’ll Need For This Recipe
- Salted Butter - I find it easiest to use salted butter. If you only have unsalted butter, just add an extra ¼ teaspoon of salt.
- Brown Sugar - I prefer the flavor of light brown sugar for these, but if you want an even stronger caramel and molasses flavor you can use dark brown sugar.
- Whipping Cream - there really isn’t a substitute for whipping cream in this recipe as you need the higher fat content to make sure that the caramel mixture won’t break.
- Corn Syrup - this adds a little sweetness, but it’s main job is to keep the caramel from crystallizing and getting grainy.
- Mini Marshmallows - mini marshmallows are the way to go because they melt quickly. Make sure they are fresh!
- Rice Krispies - you will need about 6 cups for this recipe.
How to Make Caramel Rice Krispies Treats
- Make the caramel mixture. Melt the butter, then add the brown sugar, cream, and corn syrup. Boil, then add half of the mini marshmallows and melt.
- Fold with the Rice Krispies. In a separate large bowl, combine the other half of the marshmallows and the Rice Krispies. Add the caramel mixture and fold together.
- Spread into a baking dish. Transfer the mixture to a lightly buttered 9” x 13” baking dish and gently but firmly pat down evenly.
- Let set. Allow to cool before cutting. Enjoy!
Frequently Asked Questions
If you pack down the mixture too firmly, you’ll end up with Rice Krispie Treats that are hard and dense. Make sure to press just firmly enough so that they stick together.
I recommend storing these Rice Krispie Treats at room temperature. Because of the high butter and fat content, storing them in the fridge can make them get way too hard. As long as you store them in an airtight container in a cool, dry place they should stay fresh for up to 4 days.

Salted Caramel Rice Krispie Treat Recipe
Ingredients
- ½ cup Salted Butter
- ½ cup Brown Sugar
- ¼ cup Whipping Cream
- 2 Tablespoons Corn Syrup
- 14 oz Mini Marshmallows or 4 cups
- 6 cups Rice Krispies Cereal
Instructions
- Coat the inside of a 9" x 13" baking dish with butter or cooking spray, then set aside.
- Add the Rice Krispies and 2 handfuls (or about 2 cups) of marshmallows to a large mixing bowl and combine.
- In a large saucepan, melt butter over medium heat. Once melted, add the brown sugar, whipping cream, and corn syrup. Bring to a rapid boil. Add the remaining mini marshmallows and remove from heat. Stir the marshmallow mixture until the marshmallows are almost completely melted.
- Add the marshmallow mixture to the rice krispies and fold together. Transfer the rice krispies mixture into the prepared baking dish. Using the back of a spoon, spread the mixture evenly into the dish, then either wet or spray your hands with nonstick cooking spray and gently but firmly pat down the Rice Krispies treats.
- Cool for about 20 minutes, or until they hold their shape, then cut into 3" squares. Enjoy!
