What is a burrito bowl you ask? Well, it’s basically all of the burrito fillings served in a bowl instead of wrapped up into a tortilla. At Chipotle, you generally start with a choice of rice, beans, and protein and then add your favorite toppings.  

For this Copycat Chipotle Chicken Bowl, we’ve created for you our family’s favorite combo that you can make right at home.  It’s got Chipotle marinated chicken with cilantro lime rice and seasoned black beans, topped with plenty of guacamole, sour cream and salsa.  So yummy!

These ingredients are just a starting point and the quantities are suggestions, so have fun mixing and matching different proteins, rices, beans and toppings to create your very own family favorite Chipotle burrito bowls.

Chicken Bowl Toppings

  • Cilantro Lime Rice – we love this copycat version, or you can use any type of cooked rice that you like.
  • Chipotle Chicken – our copycat Chipotle Chicken is marinated in adobo sauce, lime juice and seasoning then cooked over the grill.  Feel free to swap out any other type of chicken, or another protein for that matter.
  • Seasoned Black Beans – these are seasoned with spices that make it taste just like the ones at Chipotle – chili powder, cayenne pepper, cumin, dried oregano and more.  Swap out with plain black beans, another type of beans or skip altogether!
  • Guacamole – make your own, or buy pre-made from the store to save some time.
  • Cheese – we like shredded cheddar but you could use a Mexican blend, Pepper Jack or queso fresco.
  • Sour Cream – any type will taste great.
  • Salsa – make your own or purchase your favorite brand.

How to Make This Chipotle Chicken Bowl

  1. Prep the toppings. Prepare the recipes for Chipotle Chicken, Cilantro Lime Rice, Guacamole and Black Beans as directed.
  2. Assemble. To assemble each bowl, add 1/2 cup of rice, 1/2 cup of chicken, and 1/2 cup of black beans.
  3. Serve. Top with guacamole, shredded cheese, sour cream, and your favorite salsa, and serve immediately.  Enjoy!

Recipe Variations and Substitutions

  • Other toppings might include shredded lettuce, chopped cilantro, diced red onion, thinly sliced jalapenos, pico de gallo, plain black beans, corn, queso fresco, sliced scallions or sliced bell peppers.
  • Swap out the protein for bite sized pieces of Steak Fajitas, Chili Lime Steak Bites or Slow Cooker Pork Carnitas.
  • Instead of using white rice for your Cilantro Lime Rice, try cooking brown rice or make some Spanish Rice for a fun variation.
  • Increase or decrease the spice in the Chipotle Chicken to your liking.  Speaking of, feel free to use any type of leftover cooked chicken breasts or chicken thighs that you have around from weekly meal prep.
  • Swap out the Chipotle Black Beans with pinto beans or garbanzo beans.

Storing Instructions

  • Refrigerator: If you don’t finish your whole bowl, cover it with plastic and store in the fridge for up to 2 days.  Otherwise, it’s best to store unmixed ingredients separately in the fridge for up to 4-5 days, depending on the ingredient.
