The Best Slow Cooker Chicken Fajitas
If you have never tried making fajitas in the crockpot, today’s your lucky day! These Slow Cooker Chicken Fajitas are part of our family’s regular meal rotation all year long. No matter how busy you are, there’s always time to toss a few ingredients into the slow cooker and walk away for a few hours.
You can even make the chicken and veggies a day before, then pull them out with all of the toppings the next evening, reheat and let everyone make their own.
This recipe can also be used to make other Mexican and Tex Mex favorites, such as chicken fajita salad, chicken fajita quesadillas, chicken fajita nachos, chicken fajita pizza… you get the idea.

Ingredients in Slow Cooker Chicken Fajitas
- Chicken Breast - we like to use boneless, skinless chicken breast for fajitas. You can also use chicken tenders, although they are usually a bit more expensive.
- Bell Peppers - you can use any colors that you like! We recommend picking different colors to make your fajitas extra colorful.
- Onions - you can use white, yellow or even red onions in this recipe.
- Diced Tomatoes - canned diced tomatoes will work great.
- Garlic Salt - if you don’t have garlic salt, you can easily make some by mixing half salt and half garlic powder.
- Taco Seasoning Mix - you will often find this in jars or packets in the spice aisle at the grocery store. Any brand will work.
- Chili Powder - this is optional, but adds a nice spice.
How to Make this Slow Cooker Chicken Fajitas Recipe
- Place prepared bell peppers and onions in the bottom of a slow cooker. Add half of the diced tomatoes and sprinkle the garlic salt evenly over the top.
- Lay the chicken over the top of the peppers and onions and sprinkle with taco seasoning and chili powder. Add the remaining diced tomatoes and place the lid on the slow cooker.
- Cover and cook on high for 3 hours, or on low for 4 ½-5 hours, until the chicken is cooked through and the veggies are tender.
- Once cooked, remove chicken from the slow cooker and place onto a cutting board. Slice into 1" strips, place into a separate bowl and squeeze the juice of ½ lime over the chicken to season, along with a little salt and pepper if desired.
Assembling the Slow Cooker Fajitas
- Collect your favorite toppings: the first step to assembling your Slow Cooker Chicken Fajitas is to collect all of your favorite toppings. Our favorites include lime wedges, sour cream, avocado slices, salsa, shredded cheddar cheese and shredded lettuce. Mix and match, using whatever you have around or whatever your family loves most.
- Warm your tortillas: the easiest way to do this is to heat a saute pan over medium high heat and place a tortilla in the center. After about 1 minute, flip sides and warm the other for another minute or so. Keep the warm tortillas covered in a kitchen towel (or tortilla warmer, if you have one) until you are ready to serve.
- Build the fajitas: you can build these for each personally, or serve everything family-style. This way everyone can take a little of the toppings that they like!

Can I Make Chicken Fajitas on the Stovetop?
Absolutely! These taste great sautéed or grilled. If you choose to cook the chicken and veggies on the stovetop, you’ll want to first slice the chicken, bell peppers and onions into 1” strips, then toss them into a large bowl along with the diced onions, garlic salt, taco seasoning, chili powder and about 1-2 tablespoons of avocado or canola oil.
Heat a large saute pan or cast-iron skillet over medium-high heat, add the chicken and veggies, sear for about 1 minute, then reduce the heat and cover for about 10-15 minutes, or until the chicken has reached an internal temperature of 165 degrees F.
How to Store and Reheat Crockpot Chicken Fajitas
- Store: store leftover chicken, peppers and onions in an airtight container in the refrigerator for up to 4 days. If you have leftover toppings, you can store each topping in a separate container in the fridge, too.
- Microwave: transfer the chicken and veggies to a microwave safe container and heat for about 30 seconds at a time until they are warm all the way through.
- Stovetop: warm a skillet over medium heat, then add the chicken, peppers and onions along with a little water, warming and stirring until they are warm all the way through.
Tips and Variations
- Plan on ¼ lb of chicken per person when deciding how much to make.
- Use any leftover chicken fajitas to add to salad, a burrito bowl, quesadillas or nachos - yum!
- Keep the lime juice separate for each person to add themselves.
- For an easy, fun meal, serve family-style so that each person can build the fajitas with their desired toppings just exactly how they like.

- 2 large Bell Peppers any color, sliced
- 2 medium Onions white, yellow or red, sliced
- 1 14-oz can Diced Tomatoes
- 1 Tablespoon Garlic Salt
- 3 large Chicken Breasts
- 1 Tablespoon Taco Seasoning Mix any brand
- 1 teaspoon Chili Powder
For Serving
- 8-10 small Flour Tortillas low carb tortillas if desired
- 1 large Lime ½ squeezed onto chicken, ½ cut into wedges
- ½ cup Sour Cream
- 1 whole Avocado sliced
- ¼ cup Salsa
- ½ cup Cheddar Cheese shredded
- 2 cups Lettuce shredded
Instructions
