- Onion: Use a yellow or white onion
- Butter: Salted butter works great in this recipe.
- Jalapeno Pepper: Use a fresh jalapeno pepper and wear gloves to protect your hands.
- Garlic: You can use pre-minced garlic from a jar or mince your own.
- Sour Cream: full or skim sour cream works great in this recipe.
- Cream Cheese: Full fat or part-skim cream cheese works great.
- Chili Powder: Whatever you have on hand is great
- Monterey Jack Cheese: This is the cheese you'll use in the corn dip and also on top. You could sub this for pepper jack or mozzarella cheese if you're in a pinch.
- Corn: Super Sweet Corn is preferred here. The small kernel corn works best. You can get super sweet corn in the freezer section of the supermarket. White or yellow super sweet corn works great.
How to Make Fiesta Corn Dip
- Preheat oven to 400 degrees.
- Spray an 8x8" or 9x9" pan with nonstick cooking spray.
- Mince the onion, garlic, and jalapeno.
- In saute pan, melt the butter and add the onion, garlic, and jalapeno. Saute on medium heat until the vegetables turn translucent and then slightly golden brown.
- In a medium-sized mixing bowl, mix together the onion mixture, sour cream, cream cheese, chili powder, and 1 cup of the Monterey jack cheese. Mix
- Stir in the corn and spread into the greased baking dish.
- Sprinkle the remaining ยฝ cup Monterey jack cheese on top.
- Bake at 400 degrees for 25-30 minutes or until cheese is melted and golden brown.
- Serve with your favorite crackers, tortilla chips or veggies.
