Easy Chicken Breast Slow Cooker Recipe

I think there is this idea that anything that is cooked in the slow cooker is automatically super moist and delicious. But, that sadly isn’t always the case. If you have ever overcooked chicken in a slow cooker, you know what I mean.

I wanted to make a simple recipe for slow cooker chicken that was virtually foolproof and just as delicious as rotisserie chicken. Because despite being convenient, the price of rotisserie chicken can really add up. They are usually pretty small chickens and the amount of meat that you get off of one isn’t a lot.

Why You’ll Love This Recipe

  • It’s budget-friendly! You’ll get far more meat out of cooking chicken breast in a slow cooker vs buying a rotisserie chicken at the store.
  • Minimal prep. This is one of those dump-and-go recipes that is about as easy as it gets. There isn’t even anything to chop up—just add the ingredients to your slow cooker, set the temp, and let it cook.
  • Perfect rotisserie chicken substitute. You can use this chicken anywhere you would use rotisserie chicken. That includes soup, salads, casseroles, and so much more.

Key Ingredients You Will Need

  • Chicken breast: choose boneless and skinless chicken breasts that are nice and firm. I will always opt for the higher quality chicken. You can use frozen chicken, but be sure to let it thaw completely before adding to the slow cooker.
  • Butter: butter is probably the second most important ingredient in this recipe, besides the chicken. The added fat makes the chicken super juicy and flavorful.
  • Chicken broth: this is what the chicken slowly cooks in, keeping it as moist as possible.
  • Seasoning: this is where you can go simple or turn this chicken into a completely different dish. In this recipe, I call for using salt, pepper, onion powder, garlic powder, and paprika. Feel free to add seasoning to fit whatever it is that you are using the chicken for.

How to Cook Chicken Breast in a Slow Cooker

  1. Add ingredients to the slow cooker. Add the chicken breasts to a slow cooker, then sprinkle the seasoning mix evenly over the top, along with the butter and chicken broth
  2. Cook. Cover and cook on low for 5-6 hours, or on high for about 3 hours, checking the internal temperature of the chicken to be sure it has reached 165 degrees F. in the thickest spots.
  1. Portion the chicken. Once cooked, turn off the slow cooker and remove the chicken to slice, dice, or shred as desired, then add back to the broth to soak up the juices.  Use in place of rotisserie chicken in recipes. Enjoy!
