Easy Crock Pot Rotisserie Chicken
With this Slow Cooker Rotisserie Chicken recipe in your back pocket, you’ll be able to make tender juicy rotisserie chicken with delicious, crispy skin right in your very own home. No rotisserie spit necessary - all you’ll need is a 7-8 quart slow cooker and a whole chicken.
Sure, those store bought rotisserie chickens are convenient, but I would argue that this recipe couldn’t be much easier or hassle-free. All you need to do is mix together a simple spice rub, nestle your chicken into your slow cooker, and let ‘er rip. If you want to get the skin nice and crispy, you can even toss it into the broiler for a few minutes.
Once it's finished cooking, carve the chicken and serve with your favorite pasta, rice, salads, or veggies, or shred it and use in any recipe that calls for cooked chicken. Be sure to also try our Lemon Pepper Rotisserie Chicken Recipe too.
Ingredients in Slow Cooked Rotisserie Chicken
- Whole Chicken - this recipe calls for any 4-5 pound whole chicken. I promise it will fit in any standard 6-7 quart slow cooker.
- Paprika - this adds a mildly sweet flavor to your chicken. You can use regular or smoked paprika.
- Brown Sugar - use either light or dark brown sugar for this spice rub.
- Garlic Powder and Onion Powder - these are nice because they give off a milder, sweeter flavor of both garlic and onions without the hassle of prepping them and without the larger pieces.
- Salt and Pepper
- Olive Oil - you could also substitute avocado oil.
How to Make Rotisserie Chicken in a Crock Pot
- Prepare the chicken. Prepare the whole chicken by removing the innards from the chest cavity. Use a paper towel to pat dry both inside and out.
- Make the spice rub. In a small mixing bowl, combine the paprika, brown sugar, garlic powder, onion powder, salt, and pepper to make a sweet rub. Mix well, then use your hands to rub the mixture all over the chicken. Tie legs together if desired.
- Cook the chicken. To keep the chicken from resting on the bottom of the slow cooker, place a small wire rack or 4 balls of aluminum foil. Place the chicken in, chicken breast side up. Cover and cook on low for 6-8 hours or on high for 4-5 hours until an internal thermometer reads 165 degrees in the thickest part of the breast.
- Broil. Preheat the oven broiler about 30 minutes before the chicken is done cooking. Once the chicken has cooked through, place the whole chicken on a large baking sheet. Drizzle with olive oil and broil for about 2 minutes, or until the chicken skin is golden and crispy. Be sure to keep a close eye so that it doesn't burn!
- Rest and serve. Remove chicken from the broiler and let rest for at least 10 minutes before serving. Enjoy!
