It’s hard to imagine a recipe that is much easier than this 3 ingredient sausage dip. Somehow, the slow cooker works some magic and pulls together an incredibly flavorful, creamy, and addicting dip with just cooked sausage, cream cheese, and spicy diced Rotel tomatoes.

If you want to spice it up, you could add minced jalapenos. Or, cook the sausage with chopped onions and garlic for a little extra flavor. There are so many ways to easily customize this dip! My favorite dippers for this are tortilla chips and Fritos. The crunchy chips and creamy dip are basically made for each other. Sliced bread, crackers, and even fresh veggies are also delish.

The 3 Ingredients You’ll Need

  • Hot Italian Sausage – this most often comes in casing so you will need to remove that first. Just slice down the center of each sausage lengthwise and squeeze out into the skillet. You can also use ground sausage.
  • Cream Cheese – this is what makes the entire dip cheesy! The tangy flavor is perfect with the slightly spicy tomatoes and sausage. I like to cut it into small cubes first so that it melts more easily.
  • Rotel Diced Tomatoes and Green Chilies – this is the most popular brand of green chili diced tomatoes that you will find. You can usually get it in a few different heat levels so choose whichever you know you and your family or friends will prefer.

How to Make Rotel Sausage Dip

  1. Cook the sausage. In a skillet over medium high heat, add 1/4 cup water and the sausage. Brown the sausage, breaking it up into small crumbles with a spatula. Once cooked, transfer to a paper towel lined plate. 
  2. Cook. Add the cooked sausage, cream cheese, and diced tomatoes to a lightly sprayed small slow cooker. Cover and cook on high heat for about 2 hours, stirring every 30 minutes.
  3. Serve. Serve with tortilla chips, bread, or fresh veggies. Enjoy!

Frequently Asked Questions

Can I make this with Velveeta cheese?

Sure! While this sausage cheese dip is made with cream cheese, Velveeta is a commonly used melting cheese. Just swap out the same amount of cream cheese for Velveeta, or add half and half.

Should I drain the Rotel tomatoes before adding?

Nope—the liquid will add even more flavor as it mixes with the melted cream cheese. Just dump in the entire can.

What other kinds of tomatoes can I use?

If you aren’t a huge fan of spicy dips, you can swap out the Rotel tomatoes with any other kind of canned diced tomatoes. Feel free to add your own seasoning, such as garlic powder or dried herbs.

  • 1 pound Hot Italian Sausage, removed from casing
  • 16 ounces cream cheese
  • 1 10-oz can Rotel Green Chili Tomatoes

Instructions
 

  • In a skillet over medium heat, add 1/4 cup water and the sausage. Cook until no longer pink, breaking it up into small crumbles with a spatula. Once cooked, transfer to a paper towel lined plate.
  • Spray the inside of a small slow cooker with nonstick cooking spray. Add the cooked sausage, cream cheese, and the can of Rotel tomatoes.
  • Cover and cook on high heat for about 2 hours, stirring every 30 minutes or so, until the cream cheese is melted.
  • Serve warm with chips, bread chunks, or fresh veggies. Enjoy!
