    These no-bake scotcheroos are quite possibly the best peanut butter Rice Krispie Scotcharoos recipe. This is a no-bake cookie bar. It's a soft and chewy peanut butter Rice Krispie Treat and has thick and rich butterscotch and chocolate topping.

    Can you freeze Rice Krispie Treat treats?

     Rice Krispies treats can be frozen. Let the cookie bars cool completely, cut them into squares, and then wrap each Square in a piece of wax paper or parchment paper and place them in a gallon freezer bag. You can freeze these no-bake cookie bars for up to 3 months.

     Why are my scotcharoos hard?

     If your scotcharoos are hard it is probably from over boiling. The recipe calls for only 3 minutes of boiling on medium heat. Also, be sure to let your Scotcheroos come up to room temperature before eating.

    Ingredients in Scotcharoo Bars

    • Peanut Butter- Creamy peanut butter works great
    • Butter- salted is great
    • Corn Syrup- sometimes called glucose syrup or Karo Syrup.
    • Sugar- Granulated Sugar
    • Marshmallows- Mini marshmallows, about a half bag. 
    • Chocolate Chips- Semi-sweet or Milk Chocolate Chips
    • Butterscotch Chips- It's the perfect combo with chocolate chips for this amazing topping.

    How to Make the Best Recipe for Scotcheroos

    1. Spray a 9 by 13" baking dish with non-stick cooking spray. Set aside.
    2. Melt the butter on medium heat in a medium saucepan or nonstick dutch oven. Add the corn syrup and sugar. (Until sugar dissolves) Heat and stir sugar mixture, and cook for 2-3 minutes.
    3. Spray a 9 by 13" baking dish with non-stick cooking spray. Set aside.
    4. Remove from heat, add Peanut Butter and marshmallows and stir until combined and the marshmallows are almost melted. Add rice crispies. Mix.
    5. Pour the cereal mixture into the prepared 9 by 13" baking dish.  Spread the mixture evenly into the baking dish using the back of a spoon. 
    6. In a microwave-safe bowl, add the chocolate chips and butterscotch chips. Cook for 1 minute. Stir, and repeat as needed until chips are melted. Pour onto the rice crispies.
    7. Cool until they hold their shape.  Cut into 3" squares and enjoy!

    • ½ bag Mini Marshmallows (or 4 cups mini marshmallows)
    • 1 cup Peanut Butter
    • 5 cups Rice Crispy Cereal

    Topping for Scotcharoos

    • 1 cup Chocolate Chips milk or semi sweet
    • 1 cup Butterscotch Chips

    Instructions

    • Cool until they hold their shape.  Cut into 3" squares and enjoy!

      The recipe dated May 2022 seems to have the correct measurements. The more butter the better these are! I like a softer scotcheroo so these are great!

      Stupid.wasted time trying to find basic amount of Rice Krispies
      And after reading comments saw several others had asked the same. Also I don’t like reading directions before the ingredients that’s confusing

      So what is the answer to Becky’s question of how much butter to use? The video shows 1/4 cup, but the recipe says 1 cup!

        Great recipe! They just turn out so good! Chewy, crispy things that I love!
        I had to make a little alteration when I found out that I didn’t have mini marshmallows, so I used instead, marshmallow creme (1/2 jar of 7oz jar), and I thought that the 1c Chocolate chip and 1c Butterscotch, would be too much, I just cut to 1/4Choc. 1c ButterScotch, and I used 7c of Rice Krispy! Delicious!!!
