This is a crispy Oven Baked Chicken Parmesan recipe.  It’s made with boneless skinless chicken breast, or chicken tenders, and cooked until crispy on the outside and tender and moist on the inside.

It’s covered in sweet marinara sauce and loaded with cheese.  Enjoy this chicken parmesan recipe as a main dish with a salad on the side or over your favorite pasta. This parmesan chicken baked in oven is a little bit of a healthier spin on the regular pan-fried parmesan chicken.  It cuts out a couple of steps and also the grease from frying the chicken.

Chicken Parmesan Recipe Variations

There are a couple of variations for this recipe that work really well: 

  • Baked Parmesan Crusted Chicken Tenders: just substitute chicken tenders for those boneless, skinless chicken breasts.  However, you will need to reduce your cooking time so your chicken tenders aren’t overcooked. 
  • Baked Chicken Parmesan without Breading: Just leave off the egg wash and don’t use the panko breadcrumb mixture.  You will season your chicken with the Italian seasonings, garlic powder, salt and pepper, cook the chicken, and then cover as usual with the marinara sauce and cheese.

Baked Chicken Parm Ingredients

  • Chicken: You can use boneless skinless chicken breasts or chicken tenders.  Adjust your cooking times to how thick your meat is and use a digital thermometer to make sure your meat isn’t overdone.
  • Breading: The breading in this recipe can also be altered to fit your family’s needs.  You can use panko breadcrumbs, make your own breadcrumbs, use gluten-free crackers or just about any combination of those things too.  This recipe is also very forgiving.  Make sure your breading has a low moisture content so the chicken becomes crispy on the outside as it bakes. 
  • Egg Wash: This is simply an egg and a little water to make the wash thinner so the breading isn’t too thick.  You want it just thick enough so the breadcrumbs will stick to the chicken.
  • Marinara: You can make a homemade marinara sauce or use a pre-made jar.  Just use your favorite.  
  • Cheese: There is a bit of parmesan cheese in the breadcrumb mixture.  The recipe also calls for parmesan and mozzarella on top of the marina sauce.  Oh so yummy!

How to Make Oven Baked Chicken Parmesan

  1. Start by trimming off any fat or tendons from your chicken breasts.  Lay your chicken breast in a Ziplock bag or between two sheets of plastic wrap.  Using a meat tenderizer, rolling pin, or the bottom of a mason jar, give the chicken a few good whacks on the thickest part of the chicken breast.
  2. Lay a sheet of parchment paper on a large baking sheet.
  3. In a small bowl, beat the egg with a fork and add a tablespoon of water.
  4. In a pie plate, add the bread crumbs, Italian seasoning, garlic powder and 6 Tablespoons of Parmesan cheese.  Mix.
  5. Dip the raw chicken breast into the egg mixture, roll in the breadcrumb mixture (make sure all areas on the chicken breast are covered) and lay on parchment paper. You can also bake the chicken on a greased cookie sheet. 
  6. Salt and pepper the chicken breasts.
  7. Bake in a pre-heated oven on 350 degrees for 30-35 minutes.
  8. When the chicken registers 165 degrees on a digital thermometer, take it out of the oven.
  9. Add a thick layer of your favorite mozzarella cheese on the chicken. Top the chicken with parmesan and mozzarella cheese and broil for about 5 min or until the cheese is golden brown.
  10. Garnish with minced parsley or basil if desired

  • 3 pounds chicken breasts

  • 1 cup mozzarella cheese, shredded

Egg Wash

  • 1 large egg
  • 1 tablespoon water

Breadcrumb Mixture

  • cups breadcrumbs, panko, homemade, or even crushed crackers
  • 1/3 cup Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions
 

  • Preheat the oven to 350 degrees F.

  • Remove from the oven and add a thick layer of mozzarella cheese and the remaining Parmesan cheese over the top. Broil for about 5 minutes, or until the cheese is golden brown. 
  • Take the baked chicken out of the oven and garnish with minced parsley or basil before serving. Enjoy!

Storing leftovers: store leftover chicken in an airtight container in the fridge for up to 3 days.
To make this as a freezer meal, cover and store it in a disposable baking dish or similar for up to 2 months. To thaw, just transfer to the fridge for about 24 hours. Bake as directed.
To reheat: either microwave or reheat in a preheated 350 degree oven until warmed through.
