Jalapeno Popper Hasselback Chicken
Wouldn't you know it, this Jalapeno Popper Hasselback Chicken only takes a few minutes to throw together. It an easy weeknight meal the entire family will love.
I added the entire can of Jalapenos to my recipe and only had 3 medium-sized chicken breasts. It was definitely on the spicy side. If you love buffalo wings, it's about the same temperature as those. If you love the flavor but don't want quite that much heat, only add half the can of jalapenos. It will still add the flavor but keep the heat to a minimum.
Jalapeno Popper Filling Recipe For Chicken
The filling for this Hasselback chicken recipe is one that is similar to a jalapeno popper. You are going to use a half brick of cream cheese, a Tablespoon of Ranch Seasoning Mix, and a can (half if you want to keep the spiciness down) of jalapenos. It's an easy filling for this decadent chicken recipe. It really doesn't get better than this creamy, spicy, and ranch-flavored jalapeno popper filling. YUM!

Jalapeno popper casserole
You can also turn this chicken recipe into a casserole. You could cut the chicken into 1" chunks and then spread the jalapeno popper filling on the chicken and smother it with cheese. It would be considered a keto jalapeno popper chicken recipe. The best part is, it's loaded with flavor and low carb!

Ingredients in Hassleback Jalapeno Popper Chicken
- Boneless, skinless Chicken Breast-You can use really big ones or smaller ones, whatever you prefer.
- (1) 4oz can Jalapenos- roasted and diced
- 4 oz Cream Cheese- Room temperature is best. If you need to soften the cream cheese, put it on a paper plate in the microwave for 30 seconds or until it's soft and spreadable.
- Salt and Pepper- Be sure to salt and pepper the chicken before you bake it.
- Monterey Jack Cheese- A brick of cheese works best so you can slice it, add a couple of tablespoons of the cream cheese mixture and slide it between the slices of chicken.

How to Make Jalapeno Popper Chicken
- Preheat oven to 350 degrees.
- Spray a baking dish with non-stick cooking spray.
- In a small mixing bowl, combine the cream cheese, jalapenos, and ranch dressing seasoning. Mix with a spoon until well combined and creamy.
- Cut Monterey Jack cheese into slices, about 1" wide and 3" long.
- Prepare the raw chicken breast by cutting away any tendons or fat.
- Using a sharp knife, slice 6-7 slices into the chicken breast horizontally, about halfway through the chicken breast (Be sure you do not cut all the way through the chicken) Salt and pepper the chicken breasts.
- Spoon a couple of Tablespoons of the cream cheese mixture onto the Monterey Jack Cheese.
- Wiggle the cheese down into the slices of chicken.
- Bake the chicken in a baking dish for 30-40 minutes or until the internal temperature of the chicken is 165 degrees.
- Let the chicken rest for about 5 minutes before serving, enjoy!
