The flavor is a bit like caramelized baked oatmeal cookies and a bit like fluffernutter no bake cookies (minus the peanut butter). Basically, you’ll need to try them to fully understand just how amazing they are.

Key Ingredients
- Butter – salted or unsalted butter works great.
- Milk – whole milk is best but you can substitute 2% in a pinch.
- Sugar – you will need white granulated sugar for this recipe.
- Vanilla Extract – pure vanilla extract has the best flavor.
- Cookie Butter – you can buy this at many grocery stores nowadays. Trader Joe’s carries it as well as other specialty stores.
- Mini Marshmallows – I prefer to use mini marshmallows because they melt more easily. If you only have large marshmallows you can chop them up a bit before melting.
- Old Fashioned Rolled Oats – be sure not to use quick cooking oats or steel cut oats because they won’t give these cookies the right consistency.
How to Make Cookie Butter Cookies
- Boil the milk, sugar, and butter. In a nonstick pan, melt the butter. Add the milk and sugar and bring the mixture to a boil. Boil for 1 minute.
- Add the rest of the ingredients. Remove from the heat and stir in the cookie butter and mini marshmallows. Continue to stir until the marshmallows are melted. Stir in the oats and salt and mix until combined.
- Scoop and let cool. Drop by the spoonful onto your prepared baking sheet then allow the cookies to cool at room temperature for at least 1 hour or until set up.
- Serve or store. Serve immediately or store in an airtight container for 3 days at room temperature or 1 week in the fridge. Enjoy!
