This cookie butter no bake cookie recipe uses creamy cookie butter, marshmallows, and rolled oats to make easy no bake treats with rich caramelized flavor. They take just a few minutes to make and are perfect for the holidays or any time of year.
Cover a baking sheet with with parchment paper and set aside.
In a nonstick pan, melt the butter. Add the milk and sugar and bring to a boil. Boil for 1 minute, then remove from the heat and stir in the cookie butter and mini marshmallows. Continue to stir until the marshmallows are melted, then stir in the oats and salt and mix until combined.
Drop by the spoonful onto your prepared baking sheet, then allow the cookies to cool at room temperature for at least 1 hour or until set up. Enjoy!
