Sure, those store bought rotisserie chickens are convenient, but I would argue that this recipe couldn’t be much easier or hassle-free. All you need to do is mix together a simple spice rub, nestle your chicken into your slow cooker, and let ‘er rip. If you want to get the skin nice and crispy, you can even toss it into the broiler for a few minutes.

Once it’s finished cooking, carve the chicken and serve with your favorite pasta, rice, salads, or veggies, or shred it and use in any recipe that calls for cooked chicken.

How to Make Crockpot Rotisserie Chicken

  1. Prepare the chicken. Remove the innards from the chest cavity, then use a paper towel to pat dry both inside and out. 
  2. Make the spice rub. Combine the paprika, brown sugar, garlic powder, onion powder, salt, and pepper to make a sweet rub. Mix well, then use your hands to rub the mixture all over the chicken. Tie legs together if desired. 
  3. Cook the chicken. To keep the chicken from resting on the bottom of the slow cooker, place a small wire rack or 4 balls of aluminum foil. Place the chicken in, chicken breast side up. Cover and cook on low for 6-8 hours or on high for 4-5 hours until an internal thermometer reads 165 degrees in the thickest part of the breast.
  4. Broil. Preheat the oven broiler about 30 minutes before the chicken is done cooking. Once the chicken has cooked through, place the whole chicken on a large baking sheet. Drizzle with olive oil and broil for about 2 minutes, or until the chicken skin is golden and crispy.
  5. Rest and serve. Remove chicken from the broiler and let rest for at least 10 minutes before serving.  Enjoy!
