Peel the potatoes, dice into ¾" pieces, toss in a little oil and some seasoning and you're done. I like to roast sweet potatoes on parchment paper. It keeps the baked sweet potato from sticking to the pan and it makes it really easy to flip the sweet potato chunks half way through cooking.

- peel the sweet potatoes
- Cut into ¾" pieces
- Soak the sweet potatoes in a bowl of cold water while you are cutting up the rest of the potatoes and preparing the seasonings. (This will help remove some of the starch and also keep your sweet potatoes from browning before you have everything ready. Just simply drain the water from your potatoes before tossing in oil and seasoning)
- mix the seasoning with the oil. It will ensure all the sweet potatoes are evenly coated in the mixture
- toss the sweet potatoes and seasonings in a gallon ziplock bag. This will make cleanup a cinch!
- Bake/roast the sweet potatoes on a baking sheet lined with parchment paper. This will make cleanup simple and also keeps the sweet potatoes from sticking to the pan.
- Squeeze some fresh lime juice on the potatoes after they're done baking. So delish!

Chili Spiced Sweet Potato Chunks
Ingredients
- 2 24 ounce Sweet Potatoes
- 1 Tablespoon coconut Oil Avocado oil works great too!
- 1 Tablespoon Maple Syrup real maple syrup
- 1-2 teaspoon Chili Powder depending on how spicy you want the potaotes
- ½ teaspoon Paprika
- ½ tsp Onion Powder
- 1 large lime
- salt and pepper ~1 teaspoon salt and a pinch of pepper
Instructions
- Preheat oven to 400 degrees.
- Wash and peel the sweet potatoes. Cut into ¾" pieces and soak the sweet potatoes in a bowl of cold water while you are cutting up the rest of the potatoes and preparing the seasonings. (This will help remove some of the starch and also keep your sweet potatoes from browning before you have everything ready. Just simply drain the water from your potatoes before tossing in oil and seasoning)
- In a small bowl, combine the oil, maple syrup, chili powder, paprika, onion powder, salt, and pepper. stir
- Toss the sweet potatoes and seasonings in a gallon ziplock bag. This will make cleanup a cinch!
- Bake/roast the sweet potatoes on a baking sheet lined with parchment paper. This will make cleanup simple and also keeps the sweet potatoes from sticking to the pan.
- Bake at 400 degrees for 45 minutes, turning the potatoes over halfway through cooking.
- Squeeze some fresh lime juice on the potatoes after they're done baking. Add additional salt if desired. So delish!
