Ingredients

  • 1 pound sweet potatoes
  • 1 tablespoon avocado oil
  • 1 tablespoon maple syrup
  • 1/4 teaspoon chipotle powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons lime juice

Instructions

  • Preheat oven to 400 degrees F.
  • In a small bowl, combine the avocado oil, maple syrup, chipotle powder, paprika, onion powder, salt ,and pepper. Whisk well and set aside.
  • Rinse the sweet potatoes, slice in half lengthwise, then cut diagonal slits about 1" apart and 3/4 of the way down in both directions.
  • Place the washed and scored sweet potatoes into a large bowl, or a large ziplock bag, and pour in the oil and spice mixture.  Seal the bag and then shake lightly until the potatoes are evenly coated.
  • Spray a baking sheet with non-stick cooking spray, then remove the potatoes from the bowl or bag and place in a single layer on the baking sheet, with the cut side facing up.
  • Bake for about 35-45 minutes, or until the edges are slightly crispy and golden brown.
  • Once fully cooked, remove the sweet potatoes from the oven, squeeze the fresh lime juice over the top of each potato and serve immediately. Enjoy!

Notes

Storing leftovers: store leftovers in an airtight container in the fridge for up to 4 days.
Reheating: you can microwave them if you are short on time.  However, we recommend putting them into a baking dish or sheet pan in a single layer, covering with aluminum foil and reheating at 375 degrees until warmed through.  This way they will keep some of their crispy edges.
