The Best Sweet Potato Fries Recipe

These are the best sweet potato fries.  They are crispy, chewy, sweet and spicy, basically a party in your mouth.  These oven-baked sweet potato fries only take a few minutes to throw together.

Ingredients

Sweet Potato Fries

  • 4 medium sweet potatoes
  • 1 cup cornstarch
  • 1/8 cup avocado oil
  • 2 teaspoons cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Chipotle Lime Mayo

  • 1/2 cup mayonnaise
  • 1/2 cup cilantro chopped
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • 2 chipotle peppers in adobo sauce from the can
  • 2 tablespoons lime juice

Instructions

  • Preheat oven to 425 degrees F.
  • Peel and cut each sweet potato in half lengthwise.  Cut each half into 1/3" slices, then cut those slices into 1/3" pieces. As you cut them ,add the sliced sweet potatoes to a bowl of ice water to keep them from oxidizing.
  • Remove sweet potatoes from the water and lay them out flat on a towel. Pat them dry with a towel on top as well.
  • Place sliced potatoes in a large bowl and toss with the cornstarch, then transfer to a baking sheet in a single layer (you may need more than one baking sheet - be sure not to overcrowd them). Drizzle with avocado oil, then sprinkle with cumin, salt, and pepper to season.
  • Bake in a preheated oven for about 25 minutes, or until the edges are slightly crispy and golden brown.
  • Remove from the oven and allow to cool slightly while you make the Sweet Potato Fries dipping sauce. Enjoy!

Chipotle Lime Dipping Sauce

  • In a blender, combine the mayonnaise, cilantro, garlic, chipotle peppers, and the juice of one lime. Pulse on medium until well blended.

Notes

Storing leftovers: leftover fries can be stored in an airtight container in the fridge for up to 2 days. The dipping sauce can be stored for up to 5 days in a jar or another airtight container.
Reheating: reheat fries in a preheated 350 degree oven until warm.
