This roasted sweet potato recipe is so easy to make and make a perfect side dish or a base to some yummy sweet pork.Â Â It would also be a great side for Cornflake Chicken or Monterey Chicken,Â or an even healthier option, 3 Citrus Chicken.
This easy roasted sweet potato recipe is healthy and easy and has so much flavor! These sweet potatoes are made with whole sweet potatoes, chipotle seasoning, and fresh lime juice!
- 3 medium size Sweet Potatoes
- 1 Tablespoon Avocado OIl
- 1 Tablespoon Maple Syrup
- 1/4 tsp Chipotle Powder
- 1/2 tsp Paprika
- 1/2 tsp Onion Powder
- 1 Large Lime- Juiced
Pre-heat the oven to 400 degrees.
Rinse the sweet potatoes, slice in half, and cut slits on the inside of the sweet potato (this is going to give more surface area for your spices) I like to cut on a diagonal--just because it looks beautiful when it's cooked.
In a small bowl, combine the avocado oil, maple syrup, and spices.
Place the washed and scored sweet potatoes in a large ziplock bag. Pour the avocado mixture into the bag. Seal the bag and then shake the bag lightly until all the potatoes are evenly coated in the oil mixture.
Spray a baking sheet with non-stick cooking spray.
Place the sweet potatoes on the baking sheet and bake in the oven for 35-45 minutes or until the edges are slightly crispy and golden brown.
Take the sweet potatoes out of the oven and squeeze the lime juice on top of each potato. Serve immediately. Enjoy!
