    These Roasted Sweet Potatoes are crispy, chewy and a perfect balance of sweet, spicy and tangy.  They are super easy, healthy and only take a few minutes to throw together before you pop them into the oven.

    Healthy Oven Roasted Sweet Potatoes with Lime

    If you are looking for a simple and healthy side dish, here you go.  These yummy Roasted Sweet Potatoes, seasoned with maple syrup, chipotle, paprika and lime juice, are the perfect compliment to Sweet Pork, Cornflake Chicken, Steak Fajitas and more.  

    They are also a great option for meal prep since they can easily be made ahead of time and warmed up whenever you are ready to eat them.  They are made with simple, clean ingredients and will taste great all week long.  If you want to retain those crispy edges, we just recommend reheating in the oven.  But, if you are short on time, the microwave always works too!

    Ingredients in Roasted Sweet Potatoes

    • Sweet Potatoes - try and find sweet potatoes that are firm and roughly the same size.
    • Avocado Oil - if you don’t have or can’t find avocado oil, you can substitute extra virgin olive oil.
    • Maple Syrup - any type of maple syrup will taste great, but pure maple syrup is best.  You could also substitute honey or even brown sugar.
    • Chipotle Powder - this pairs so well with maple syrup and lime juice.  Feel free to increase or decrease the quantity to your liking. 
    • Paprika - any type will work.
    • Onion Powder - this adds a nice sweet onion flavor.
    • Salt and Pepper
    • Lime Juice - fresh lime juice tastes best.

    How to Make Roasted Sweet Potatoes with Chipotle and Lime

    1. Mix the chipotle oil.  In a small bowl, combine the avocado oil, maple syrup, chipotle powder, paprika, onion powder, salt and pepper.  Whisk well and set aside.
    2. Prep and score the potatoes.  Rinse the sweet potatoes, slice in half lengthwise then cut diagonal slits about 1" apart and ¾ of the way down in both directions.  Place the washed and scored sweet potatoes into a large bowl, or a large ziplock bag, and pour in the oil and spice mixture.  Seal the bag and then shake lightly until the potatoes are evenly coated.
    3. Roast.  Spray a baking sheet with non-stick cooking spray, then remove the potatoes from the bowl or bag and place in a single layer on the baking sheet, with the cut side facing up.  Bake for about 35-45 minutes, or until the edges are slightly crispy and golden brown.
    4. Season with lime and serve.  Once fully cooked, remove the sweet potatoes from the oven, squeeze the fresh lime juice over the top of each potato and serve immediately.  Enjoy!

    How long to bake sweet potatoes

    This Roasted Sweet Potatoes recipe takes about 45 minutes to fully cook at 400 degrees.  However, the cook time will vary depending on the size of your potatoes, how you cut them (i.e. chunks, sweet potato fries, left whole), how full your oven is and how often you open the oven door.

    How to know when sweet potatoes are done

    A great way to tell is to stick a fork into one of the sweet potatoes. If the fork sticks to the potato, keep cooking. If it slides off easily, the potatoes are done. They should also be golden brown and caramelized on the outside.

    What other seasonings taste good with sweet potatoes

    If you want to try something different, experiment with various combinations of curry powder, chili powder, cinnamon, allspice, ginger and fresh herbs like rosemary, thyme and cilantro.

    How to store sweet potatoes

    Keep your raw sweet potatoes in a cool dark area and they should stay fresh for up to 2 weeks.

    Storage and Reheating Instructions

    Store leftover Roasted Sweet Potatoes in an airtight container in the fridge for up to 4 days.  

    To reheat, you can microwave them if you are short on time.  However, we recommend putting them into a baking dish or sheet pan in a single layer, covering with aluminum foil and reheating at 375 degrees until warmed through.  This way they will keep some of their crispy edges.

    If you have leftover sweet potatoes, you can also dice them up and add to these freezer-friendly breakfast burritos.

    Recipe Tips

    • Scoring the sweet potatoes gives more surface area for your spices to invade.  I like cutting the sweet potatoes on a diagonal because they look so beautiful once they are cooked.
    • These sweet potatoes are a great option for meal prep.  They can easily be made ahead of time and then warmed up whenever you are ready to eat them.
    • Try and find sweet potatoes that are roughly the same size so that they will cook evenly.
