This recipe is also a great option for meal prep since the sweet potatoes can easily be made ahead of time and warmed up whenever you are ready to eat them.
If you want to keep those crispy edges, I just recommend reheating in the oven. But, if you are short on time, the microwave always works too!
Key Ingredients
- Sweet Potatoes – try and find sweet potatoes that are firm and roughly the same size.
- Maple Syrup – any type of maple syrup will taste great, but pure maple syrup is best. You could also substitute honey or even brown sugar.
- Chipotle Powder – this pairs so well with maple syrup and lime juice. Feel free to increase or decrease the quantity to your liking.
- Paprika – this adds amazing flavor and a little extra color.
- Lime Juice – fresh lime juice tastes best.

How to Make Spicy Roasted Sliced Sweet Potatoes
- Mix the chipotle oil. In a small bowl, combine the avocado oil, maple syrup, chipotle powder, paprika, onion powder, salt and pepper. Whisk well and set aside.
- Prep and score the potatoes. Rinse the sweet potatoes, slice in half lengthwise then cut diagonal slits about 1″ apart and 3/4 of the way down in both directions. Place the washed and scored sweet potatoes into a large bowl, or a large ziplock bag, and pour in the oil and spice mixture. Seal the bag and then shake lightly until the potatoes are evenly coated.
- Roast. Spray a baking sheet with non-stick cooking spray, then remove the potatoes from the bowl or bag and place in a single layer on the baking sheet, with the cut side facing up. Bake for about 35-45 minutes, or until the edges are slightly crispy and golden brown.
- Season with lime and serve. Once fully cooked, remove the sweet potatoes from the oven, squeeze the fresh lime juice over the top of each potato and serve immediately. Enjoy!
Frequently Asked Questions
This Roasted Sweet Potatoes recipe takes about 45 minutes to fully cook at 400 degrees. However, the cook time will vary depending on the size of your potatoes, how you cut them (i.e. chunks, sweet potato fries, left whole), how full your oven is and how often you open the oven door.
A great way to tell is to stick a fork into one of the sweet potatoes. If the fork sticks to the potato, keep cooking. If it slides off easily, the potatoes are done. They should also be golden brown and caramelized on the outside.
If you want to try something different, experiment with various combinations of curry powder, chili powder, cinnamon, allspice, ginger and fresh herbs like rosemary, thyme and cilantro.
Keep your raw sweet potatoes in a cool dark area and they should stay fresh for up to 2 weeks.

Storage and Reheating Instructions
- Refrigerator: store leftover Roasted Sweet Potatoes in an airtight container in the fridge for up to 4 days.
- To reheat: you can microwave them if you are short on time. However, we recommend putting them into a baking dish or sheet pan in a single layer, covering with aluminum foil and reheating at 375 degrees until warmed through. This way they will keep some of their crispy edges.
