Rice Krispie Brains
These gooey Rice Krispie brains are perfect for those of you searching for extra creepy Halloween party recipes. Theyโre just as sweet, crunchy, and gooey as regular Rice Krispies Treats. However, the marshmallow mixture is pressed into a brain mold and given fake blood and red gummy bits.
If you donโt have a brain mold, you can also use a small bowl. Before the brain sets up completely, take a knife and gently press down the center to create โlobes.โ Depending on the sizes of molds that you have, you could make individual brains or one large Rice Krispie brain.
Key Ingredients
- Butter - I like to use salted butter to make Rice Krispies Treats because it helps to cut down on some of the sweetness of the marshmallows.
- Mini Marshmallows - mini marshmallows melt the fastest so they are what I prefer. If you only have large marshmallows you could also chop them up a bit first. You will need some to melt into the butter mixture and some to fold into the marshmallow mixture off of the heat.
- Rice Krispies Cereal - any brand of crispy puffed rice cereal will work.
- Red Food Coloring - you only need a few drops of red food coloring to create a great effect. You could also use red writing icing.
- Red Gummy Candies - any red gummy candies will work because you are chopping them up anyways.
- Hershey's Red Syrup - this will be used to glaze the brain once you have unmolded it. It can usually be found by the ice cream toppings in the supermarket.
How To Make Brain Rice Krispie Treats
- Melt the marshmallow mixture. In a large dutch oven pot, melt the butter over medium heat. Add 5 cups of mini marshmallows and stir until the marshmallows are almost all melted. Turn the heat off and stir in the vanilla extract and red food dye.
- Add the Rice Krispies. In a large bowl, combine the Rice Krispies and 1 more cup of mini marshmallows and mix. Add the marshmallow mixture to the melted butter mixture and stir gently until combined.
- Press into the brain mold. Transfer to the prepared brain mold. Using the back of a spoon, spread the mixture evenly. Lightly wet or spray your hands with nonstick cooking spray and lightly pat down the Rice Krispies Treats. Use a plate to flip the rice krispies out of the mold. Add the diced gummy candy to the top of the brain. Put the brain back into the mold and press firmly. Allow to cool at room temperature for at least 30 minutes, or until it holds its shape.
- Invert the brains. Turn the Rice Krispies brain onto a platter or serving tray. Use a basting brush to coat the "brain" with red syrup before cutting slices. Enjoy!
Frequently Asked Questions
Once you add the red syrup to this Rice Krispies Treat, it will slowly begin to get soggy as it sits. You can store this Rice Krispie brain in an airtight container at room temperature for about 24 hours max, but it really does taste best fresh.

If you donโt have a brain mold or would rather not spend the money, you could use a small bowl instead. Just make sure to spray with nonstick cooking spray or lightly brush with melted butter.
