When it’s hot out and I want a dessert that can be made without heating up the kitchen, cream cheese dips are some of my favorites. They’re cool, creamy, and taste like a lightened cheesecake filling. 

This particular layered version takes sweet and tangy fruit salsa and pairs it with lemon cream cheese dip, making a super refreshing treat that you could easily eat with a spoon. My favorite way to serve it, though, is with my homemade baked cinnamon sugar tortilla chips. They take just a few extra minutes to make and are the perfect dipper.

Key Ingredients You Will Need

  • Mixed Fruit: choose fruits with a variety of colors and textures that can be cut into similar sized pieces, including pineapple, strawberries, peaches, green apple, kiwi, and mango.
  • Lime Juice: fresh squeezed lime juice adds tangy flavor, but it also helps to keep the apples from oxidizing and turning brown too quickly. 
  • Strawberry Jam: when combined with the lime juice, the strawberry jam creates a sweet glaze for the fruit. I like to use my Strawberry Freezer Jam, but you could use store bought jam. Other jam flavors would work, too, such as apricot jam or raspberry jam.
  • Cream Cheese: your cream cheese needs to be super soft, so either pull it out to room temperature at least 2 hours in advance, or warm it in the microwave for about 10 seconds at a time until soft.
  • Whipped Cream: whipped cream is folded into the whipped cream cheese to lighten it up.
  • Fresh Lemons: fresh lemon juice is added to the cream cheese layer to give it a little zest.

How to Make This Fruit Salad Dip

  1. Prepare the fruit. Wash, peel, and dice your assorted fruit so that you have about 5 cups total.
  2. Toss with strawberry lime. In a small bowl, combine the strawberry jam and lime juice, then toss with the diced fruit.
  1. Whip the cream. Whip the heavy whipping cream until soft peaks form and set aside. 
  2. Make the cream cheese layer. Whisk together the room temperature cream cheese, lemon juice, and vanilla, using the whisk attachment, until the mixture is light and fluffy. Add the powdered sugar and whip again, then fold in the whipped cream last.
  1. Assemble. Spread the cream cheese mixture evenly into the bottom of a 9″ x 9″ baking dish. Top with the fruit salsa and serve immediately with cinnamon sugar tortilla chips. Enjoy!

  • Cream cheese dip flavors. Lemon cream cheese dip is incredible with fruit, but so are vanilla, lime, and orange. Try using different citrus or even a combination of a few.
  • Make individual parfaits. Layer the fruit salsa and cream cheese dip in small individual cups and serve with a bowl of cinnamon sugar tortilla chips.

Ingredients

Fruit Salsa

  • 1 pound strawberries, diced
  • 1 cup pineapple, diced
  • 2 medium kiwi, diced
  • 1 large green apple, diced
  • 1 large mango, diced
  • 2 tablespoons lime juice
  • 2 tablespoons strawberry jam

Lemon Cream Cheese Layer

  • 1 cup heavy whipping cream
  • 8 ounces cream cheese, room temperature
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • cups powdered sugar

Instructions
 

  • Prepare the strawberries, pineapple, kiwi, green apple, and mango by washing, peeling and dicing—you will need about 5 cups total. Add them to a large mixing bowl.
  • In a small bowl, combine the lime juice and strawberry jam. Mix well, then add the strawberry lime mixture and toss to combine. Store in the fridge while you prepare the cream cheese layer.
  • In the bowl of a stand mixer, add the heavy whipping cream and whip until soft peaks form. Transfer to another mixing bowl and set aside.
  • Add the room temperature cream cheese, lemon juice, and vanilla into the stand mixer bowl and cream using the whisk attachment until the mixture is light and fluffy. 
  • Add the powdered sugar and mix on low to combine, then increase speed and mix until light and fluffy again. Turn off the mixer and carefully fold in the whipped cream using a rubber spatula, mixing until no streaks remain.
  • Spread the cream cheese mixture evenly into the bottom of a 9" x 9" baking dish. Top with the fruit salsa and serve immediately. Enjoy!
