If you want to make a pizza that tastes like it came from a fancy Italian restaurant, try this Fig and Prosciutto pizza. Despite the unique combo of flavors, everyone that tries this seems to love it. Itโs got it allโsweet fresh figs, salty prosciutto and Gorgonzola cheese, white pizza sauce, savory caramelized onionsโall baked on homemade pizza crust.
One of my favorite ways to finish any white pizza is with fresh ingredientsโin this case, fresh arugula. A drizzle of balsamic vinegar also never hurts. Without any red sauce, the flavors of the ingredients can really shine through. It makes it feel easier to get super creative!
Key Ingredients
- Pizza Dough - this homemade Pizza Dough recipe makes the most soft and chewy pizza crust. You could also use store bought dough, or even go super simple and use refrigerated pizza dough from a can.
- White Pizza Sauce - our white pizza sauce is rich, creamy, and packed with Parmesan cheese and garlic flavor. It only takes a few minutes to prepare and is totally worth the little extra effort to use homemade.
- Caramelized Onions - these are the most sweet, rich, and deeply flavored onions you will ever try. They are amazing on pizzaโespecially with sweet figs, salty Gorgonzola and prosciutto, and peppery fresh arugula.
- Gorgonzola Cheese - this salty but mild blue cheese is something I love to pair with figs. Not only is it a traditional Italian combination, itโs also the perfect mixture of salty and sweet. Goat cheese is an excellent substitute.
- Figs - figs are one of the stars of this pizza, so whether you use fresh figs, caramelized figs, or even fig jam is sort of dependent on how good the fresh figs are. If theyโre sweet and ripe when you are making your pizza, just cut them in half and use as is. Otherwise, you can use one of the other kinds.
- Prosciutto - also a star, prosciutto tastes amazing with Gorgonzola and fig.
- Arugula - once the pizza is baked, top with peppery fresh arugula.
How to Make Prosciutto and Fig Pizza
- Stretch the pizza dough. Stretch and shape your pizza dough into a 12" round pizza pan.
- Cover with white sauce and cheese. Spread the white sauce evenly and thinly over the stretched dough up to about 1" from the edge of the pizza all the way around. Sprinkle the mozzarella cheese over the top of the sauce, along with the caramelized onions, Gorgonzola cheese, and prosciutto.
- Bake. Bake in the preheated oven for about 15-20 minutes, or until the edges are golden brown and the cheese has melted. Remove from the oven.
- Add toppings and serve. To finish, add a handful of arugula, a drizzle of extra virgin olive oil, and a sprinkle of sea salt. Enjoy!
Frequently Asked Questions
For baking pizza at home, I like to use a pizza stone or just a regular baking sheet. The biggest tip is to make sure you bake the pizza hotโat least 450 degrees F. Otherwise, the dough will take too long and start to dry out. When you bake it hot it takes far less time, which is also good for this pizza because you donโt want the prosciutto or figs to get too charred.
If figs arenโt in season or you just canโt find any that are nice and ripe, you can substitute fig jam or fig preserve. It will be slightly sweeter, but as long as you donโt go crazy adding too much it will taste delicious.
If you want to keep the flavor profile but take a short cut, you could use store bought pizza dough or even refrigerated pizza dough from the can.
Tips and Tricks
- If you want to get this pizza started ahead of time, you can make the dough the day before. Just cover it with plastic wrap and store in the fridge overnight. Or, you can double the pizza dough recipe and freeze what you donโt need for later. Just shape the dough into a round, transfer it to a freezer bag, press to remove any extra air, and store frozen for up to 3 months. To thaw, transfer to the fridge overnight.
- If you like your crust on the thicker side, reduce the oven temperature to 400 degrees so that the dough has a chance to bake all the way through before the outside gets too dark.
- If your pizza crust is already golden brown on the bottom but the top isnโt baking, slide another baking sheet under your pizza to slow the baking process down.
- Try adding a drizzle of balsamic vinegar on top of the fresh arugula just before serving.
Fig and Prosciutto Pizza
Ingredients
- 1 pound Pizza Dough homemade or store bought
- ยพ cup White Pizza Sauce
Pizza Toppings
- 2 cups Mozzarella Cheese shredded
- ยฝ cup Caramelized Onions
- 3 Tablespoons Gorgonzola or blue cheese
- 3 large Figs or about โ cup of fig jam
- 4 slices Prosciuttoย cut into 1" chunks
Fresh Pizza Toppings
- 1ยฝ cups Fresh Arugula
- 2 Tablespoons Extra Virgin Olive Oil good quality
- ยผ teaspoon Sea Salt
Instructions
- Preheat your oven to 450 degrees F.
- With lightly floured hands, stretch and shape your pizza dough into a 12" round pizza pan. If it begins to resist, let the dough relax for a couple of minutes and then continue to stretch.
- Spread the white sauce evenly and thinly over the stretched dough using an offset spatula. Be sure to spread only up to about 1" from the edge of the pizza all the way around. Sprinkle the mozzarella cheese over the top of the sauce.
- Add the caramelized onions, gorgonzola cheese, and prosciutto evenly on the pizza.
- Bake in the preheated oven for about 15-20 minutes, or until the edges and bottom are golden brown and the cheese has melted. Remove from oven.
- To finish, add a handful of arugula, a drizzle of olive oil, and a sprinkle of sea salt. Enjoy!
