Croissant Breakfast Sandwich
If you have people in your house who aren’t exactly morning people, I swear that this croissant egg sandwich will do the trick. Waking up to a flaky croissant filled with scrambled eggs, bacon, sliced ham, and melted cheddar cheese? Yes please!
You can make this recipe as is or try one of the recipe variation ideas we’ve given you below. This is one of those recipes that is more of a guide to where you can fill in some of the ingredients with what you have around. Swap out the cheese, use fried eggs instead of scrambled—no matter what they will be devoured.
One more thing to love about them? You can make them ahead of time and even freeze them! Whenever you need a quick breakfast, bam—just heat and enjoy.
Key Ingredients
- Croissants – if you can get your hands on fresh bakery croissants, those are ideal. But most of the time, you can also find decent croissants at the grocery store in their bakery section.
- Bacon – cook the bacon on the crispier side so that it is easier to eat when you take a bite.
- Eggs – both scrambled eggs and fried eggs work well and taste great.
- Cream Cheese – original, veggie, or sun dried tomato cream cheese are my favorites for making bagel sandwiches.
- Cheddar Cheese – sliced cheese gets nice and gooey in the broiler and coats the eggs. You could substitute Gouda, Pepper Jack, or American cheese.
- Ham – sliced ham adds a little saltiness and even more texture to the sandwiches.

How to Make Croissant Breakfast Sandwiches
- Cook the bacon. In a skillet over medium heat, cook the bacon until crispy.
- Scramble (or fry) the eggs. Melt butter in a skillet, then add whisked eggs and cook over low heat, folding and stirring until fluffy.
- Assemble. Slice the croissant in half, spread with cream cheese, and top the bottom with the sliced cheese, eggs, bacon, and ham.
- Broil. Place in the broiler for a couple of minutes to melt the cheese.
- Serve. Add the top half and enjoy!
Variations and Substitutions
Considering this is a recipe that is barely a recipe, there are countless ways for you to customize your breakfast sandwich. Here are a few ideas to get you started:
- Use flavored cream cheese. Try one of the flavored cream cheeses that you can find at the grocery store. Or, just make your own by adding in chopped chives, sun dried tomatoes, tahini, Sriracha, or honey.
- Make fried eggs instead of scrambled. If you’re a lover of runny egg yolks, try frying your eggs instead of scrambling.
- Make it vegetarian. Instead of ham and bacon, add slices of avocado.
- Make it spicy. Instead of cheddar cheese, use pepper jack. Scramble the eggs with a little sriracha. If you really want to go spicy, you can even fold minced jalapenos into the cream cheese.
- Add some sauce. Try adding pesto, salsa, guacamole, honey mustard sauce or our easy hollandaise sauce.
