Start your day off right with this egg and cheese Breakfast Bagel Sandwich. It doesn’t get much more satisfying and delicious than eating a toasted bagel filled with eggs, bacon, ham, and melted cheese. And because it’s full of protein, it will be sure to fuel you for the entire morning.
Not only are breakfast bagel sandwiches super easy to make, they are also easy to customize. Everyone has their own breakfast food preferences, so you can make them just how you and your family like them. Want your eggs runny? Fill them with fried eggs instead of scrambled. We’ve given you suggestions below so that you can make these vegetarian, spicy, and more.
Key Ingredients
- Bagels - use freshly baked bagels if at all possible. The better the bagels, the better the sandwiches! Everything bagels, sesame bagels, onion bagels, and plain all work great.
- Bacon - cook the bacon on the crispier side so that it is easier to eat when you take a bite.
- Butter - to cook the eggs use butter, or substitute avocado oil or olive oil.
- Eggs - both scrambled eggs and fried eggs work well and taste great.
- Cream Cheese - original, veggie, or sun dried tomato cream cheese are my favorites for making bagel sandwiches.
- Cheddar Cheese - sliced cheese gets nice and gooey in the broiler and coats the eggs. You could substitute Gouda, Pepper Jack, or American cheese.
- Ham - sliced ham adds a little saltiness and even more texture to the sandwiches.
How to Make a Breakfast Bagel Sandwich
- Cook the bacon. In a skillet over medium heat, cook the bacon until crispy.
- Scramble (or fry) the eggs. Melt butter in a skillet, then add whisked eggs and cook over low heat, folding and stirring until fluffy.
- Assemble. Slice the bagels in half, spread with cream cheese, and top the bottom with the sliced cheese, eggs, bacon, and ham.
- Broil. Place in the broiler for a couple of minutes to melt the cheese.
- Serve. Add the top half and enjoy!
Recipe Variations and Substitutions
You can customize bagel sandwiches about a million different ways, but here are a few of my go-to variations and substitutions.
- Flavor the cream cheese. Either use a premade flavored cream cheese, or make your own by adding in chopped chives, sun dried tomatoes, tahini, Sriracha, or honey.
- Substitute fried eggs. If you’re a lover of runny egg yolks, try frying your eggs instead of scrambling.
- Make it vegetarian. Skip the bacon and ham and add sliced avocado instead.
- Make it spicy. Instead of cheddar cheese, use pepper jack. Scramble the eggs with a little sriracha. If you really want to go spicy, you can even fold minced jalapenos into the cream cheese.
- Add some sauce. Try adding pesto, salsa, guacamole, or our easy hollandaise sauce.

Bagel Breakfast Sandwich
Ingredients
- 1 Bagel sliced
- 2 slices Bacon
- 1 Tablespoon Butter for eggs
- 2 large Eggs
- 1 Tablespoon Cream Cheese
- 1 slice Cheddar Cheese
- 2 slices Ham
Instructions
- Preheat oven to 400 degrees F.
- Heat a skillet over medium and add the bacon. Cook for about 2-3 minutes, or until golden brown. Flip over and cook until golden, or another 1-2 minutes. Transfer to a paper towel lined plate to cool.
- Remove the bacon grease and wipe the pan clean. Add the butter to the pan and warm over medium low. In a small bowl, whisk the eggs well with a fork. Pour the eggs into the pan and cook until the bottom is set, then gently fold the eggs over low heat, cooking just until they are mostly set. Remove from the heat.
- Cut the bagel in half and spread the cream cheese evenly over each slice. On the bottom half, add the slice of cheese, then the scrambled eggs, bacon, and ham.
- Place on a small baking sheet or inside a small cast iron skillet and broil for about 2 minutes to melt the cheese and toast the bagel.
- Remove from the broiler and add the bagel top. Enjoy!
