This Chocolate Waffle Brownie Cookie recipe will have you screaming, โWhy didnโt I think of this?โ Theyโre not quite waffles, not quite brownies, not quite cookies but totally delicious and perfect for snacks, dessert buffets, parties or even cookie plates.

Waffle Brownies Ingredients
- Butter - youโll need to melt the butter, then let it cool slightly before using.
- Sugar - this recipe uses regular white granulated sugar.
- Cocoa Powder - we recommend using a high quality cocoa powder, such as Ghirardelli or Guittard.
- Eggs - any type of large eggs will work.
- Salt - sea salt works great.
- Vanilla Extract - pure vanilla extract tastes best.
- Flour - this recipe calls for all-purpose flour.
How to Make Chocolate Waffle Cookies
- Make the brownie batter. In a large bowl, combine the melted butter, sugar and cocoa powder. Stir until combined. Add in the eggs, salt, and vanilla and stir again until well-mixed. Add flour and fold with a spatula until all ingredients are combined.
- Cook the brownies in waffle maker. Spray the preheated waffle iron with cooking spray, then add about 2 tablespoons of brownie batter into the waffle iron at a time. Close waffle iron and bake for about 90 seconds, or until cooked through. Repeat with the remaining batter.

- Whip the butter. Place soft room temperature butter into the bowl of a stand mixer fitted with a whisk attachment and whip until light and fluffy, or about 2 minutes.
- Add ingredients. With the mixer off, add the cocoa powder, vanilla extract, half of the powdered sugar and half of the milk. Turn the mixer on low to combine, then increase to medium high speed and whip until light and fluffy - about 2 more minutes.
- Add the rest of the sugar and milk. Add the rest of the powdered sugar, then add the milk a half tablespoon at a time, whisking until you reach the desired consistency.
- Use immediately or store for later. Enjoy!
