Chocolate Brownie Waffle Cookies

This waffle cookie recipe will have you screaming, “Why didn’t I think of this?”  They’re not quite waffles, not quite brownies, not quite cookies, but totally delicious and perfect for snacks, dessert buffets, parties or even cookie plates.

In this recipe, you will also find instructions for making our homemade chocolate frosting. If added while the brownie waffles are still warm, the gooey fudgy frosting will melt into every single crevice.  Eat these as is, or top them with with whipped cream, mint frosting, or a scoop of your favorite ice cream.

Key Ingredients You Will Need

  • Butter – you’ll need to melt the butter, then let it cool slightly before using.
  • Cocoa Powder – we recommend using a high quality cocoa powder, such as Ghirardelli or Guittard. It gives the best chocolate flavor.
  • Eggs – eggs are what holds the brownie batter together as it cooks.
  • Vanilla Extract – pure vanilla extract tastes best. You can experiment with adding other extracts, too, like coffee extract or even mint extract.
  • Milk – you will need a little milk to thin down the frosting and get it to the perfect spreadable consistency. Heavy cream would also work.

How to Make Chocolate Waffle Cookies

  1. Make the brownie batter.  In a large bowl, combine the melted butter, sugar and cocoa powder. Stir until combined.  Add in the eggs, salt, and vanilla and stir again until well-mixed.  Add flour and fold with a spatula until all ingredients are combined. 
  2. Cook the brownies in waffle maker.  Spray the preheated waffle iron with cooking spray, then add about 2 tablespoons of brownie batter into the waffle iron at a time.  Close waffle iron and bake for about 90 seconds, or until cooked through.  Repeat with the remaining batter.
  3. Cover with chocolate frosting.  Spread chocolate frosting onto the warm brownies and allow it to melt, adding sprinkles if desired.  Enjoy!

Recipe Variations

  • Mix in chopped nuts like walnuts, pecans, or almonds.
  • Mash ripe bananas and fold them into your waffle brownie batter.
  • Layer your brownie batter with graham cracker crumbs and mini marshmallows. When baked, the marshmallows will melt and create lil waffle s’mores.
  • Swirl creamy peanut butter or Nutella into your waffle brownie batter.
  • Mix in some chopped Andes mint chocolates or add a few drops of mint extract to your batter.

Frequently Asked Questions

What kind of waffle iron should I use?

We recommend using either a mini waffle iron or a regular waffle iron.  Belgian waffles are too thick and the waffles will come out too crispy and tall.

How long do chocolate waffle cookies take to cook?

These waffle cookies will take between 1-1 ½ minutes to cook, depending on how hot your waffle iron gets.  If you want your brownie waffles to be soft, it’s best to err on the side of caution.  You don’t want to overcook these!

Can I make these ahead of time?

You can make the brownie batter a day in advance and store in the fridge.  The next day, just preheat your waffle iron and get to cooking.  

You can also make the chocolate frosting up to 1 week in advance, then let it come up to room temperature for about an hour before whipping and using.

Can I use a box brownie mix to make these?

Sure!  Just follow the directions on the box to make the batter, then cook and finish as directed in this recipe.

Storing Instructions

  • Refrigerator: you can store leftover waffle maker brownies in an airtight container in the fridge for up to 2 days.
  • Freezer: you can freeze both the brownie batter and the chocolate frosting.  Transfer to either freezer bags or another airtight container and store for up to 2 months, then thaw overnight in the fridge.

Brownie Waffle Cookies

  • 1/2 cup butter, melted
  • 3/4 cup sugar
  • 1/3 cup cocoa powder
  • 2 large eggs
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Chocolate Frosting

  • 1/2 cup butter, room temperature
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk
  • cups powdered sugar
  • 1/2 cup cocoa powder

Instructions
 

Chocolate Brownie Waffles

  • Preheat a mini waffle iron.
  • In a large bowl, combine the melted butter, sugar, and cocoa powder. Stir until combined. Add in the eggs, salt, and vanilla and stir again until well-mixed. Fold in the flour last, mixing until all ingredients are combined.
  • Spray the waffle iron with cooking spray, then add about 2 tablespoons of brownie batter into the waffle iron at a time. Close and bake for about 90 seconds. Check to see if it is done by using a fork to lift the edges up and remove from the waffle iron once it has cooked.
  • Repeat with the remaining batter.

Chocolate Frosting

  • Place soft room temperature butter into the bowl of a stand mixer fitted with a whisk attachment and whip until light and fluffy, or about 2 minutes.
  • With the mixer off, add the cocoa powder, vanilla extract, half of the powdered sugar and half of the milk.  Turn the mixer on low to combine, then increase to medium high speed and whip until light and fluffy—about 2 more minutes.
  • Add the rest of the powdered sugar, then add the milk a half tablespoon at a time, whisking until you reach the desired consistency.
  • Spread chocolate frosting onto the warm brownies and allow it to melt, adding sprinkles if desired. Enjoy!
