    Homemade Vegetable Beef Soup

    Ground Beef Vegetable Soup recipe is a simple, hearty one-pot recipe that reminds you of being a kid. On a cold day, it’s the perfect cozy meal to serve with crusty bread or dinner rolls. Filled with ground beef, potatoes, and veggies all cooked in a flavorful beef and tomato broth it really is a meal on its own.

    If you have any leftovers, you can store them for a quick meal later in the week, or go ahead and freeze for up to 2 months. Feel free to substitute beef stew meat or chunks of chuck roast, just making sure to cook until tender before adding the veggies. And, if you’re looking for a vegetarian option, this Hearty Vegetable Soup is a great option.

    Ingredients in Ground Beef Soup

    • Ground Beef - I recommend using lean ground beef, such as 85/15, so that the soup doesn’t get too greasy. You could also substitute ground turkey, or even beef stew meat. No matter what you use, you’ll want to brown the beef (or turkey) first. If using stew meat, you will need to simmer the soup until the beef is tender before adding the veggies.
    • Onion - you’ll need to dice 1 medium yellow or white onion, or about 1 cup.
    • Garlic Powder - this adds a great mild garlic flavor with the added bonus of zero prep.
    • Salt and Pepper
    • Beef Broth - for Vegetable Beef Soup, I like to use beef broth or beef bone broth to create a super rich base. You could substitute chicken broth or even vegetable broth if you would like.
    • Potatoes - you’ll need about 4 red or yellow potatoes that have been washed, peeled, and diced into ¼” pieces.
    • Celery - dice about 1 cup of celery into similar ¼” pieces.
    • Frozen Mixed Vegetables - using frozen veggies rather than fresh makes the recipe much quicker because it’s less to chop. You can use mixed veggies, frozen green beans, frozen corn, frozen peas, or a combination of any other veggies that you would like. Canned work will work, too.
    • Bay Leaves - just 2 bay leaves (dried or fresh) will make a big difference in the flavor of your soup.

    How to Make Vegetable Beef Soup Recipe on the Stove Top

    1. Cook the ground beef and onion. Heat a large pot over medium high heat then add the diced onions and ground beef.  Cook, stirring occasionally, until the onions are transparent and the meat is just slightly pink. 
    2. Simmer the soup. Add the garlic powder, salt, pepper, beef broth, diced potatoes, mixed vegetables, diced celery, tomato paste, and bay leaves. Bring to a boil, then reduce to a simmer and continue to cook for about 20 minutes, or until the potatoes are tender.
    3. Serve. Remove the bay leaves before serving with crusty bread, garlic bread, or dinner rolls. Enjoy!

    How to Make Crockpot Vegetable Beef Soup

    1. Cook the ground beef and onion. Heat a large pot over medium high heat then add the diced onions and ground beef.  Cook, stirring occasionally, until the onions are transparent and the meat is just slightly pink. 
    2. Add to the crockpot and cook. Add the cooked beef, garlic powder, salt, pepper, beef broth, diced potatoes, mixed vegetables, diced celery, tomato paste, and bay leaves into the slow cooker. Cook on high for about 2 hours, or until the potatoes are tender.
    3. Serve. Remove the bay leaves before serving with crusty bread, garlic bread, or dinner rolls. Enjoy!

    What can I use besides ground beef?

    Ground beef is a quick, easy, and economical choice. However, you can also make this soup with beef stew meat, chuck roast, skirt steak, or even brisket.
