Pork Tenderloin With Potatoes and Carrots

There’s something so homey about an oven roasted pork tenderloin served with a side of roasted veggies.  It’s delicious, filling, healthy and uses just a few simple ingredients.  Pork tenderloin is one of our favorite cuts of meat.  It’s inexpensive, and no matter how you cook it, it’s virtually impossible to mess it up.  

For this recipe, we have gone super simple, seasoning with thyme, rosemary, sage, garlic and onion powder.  No marinades and no crazy ingredients.  If you are a fan of the flavors, it wouldn’t hurt to toss in a pinch or two of Italian seasoning blend, cumin or paprika.

Key Ingredients

  • Pork Tenderloin – these typically come about 1 to 1 1/2 pounds each.  You can also use very small pork tenderloins or double the ingredients and make this recipe with very large pork tenderloins.  It’s very versatile.
  • Butter – make sure your butter is at room temperature so it will mix and spread easily.
  • Garlic – we like the flavor of fresh minced garlic for this herb butter.
  • Thyme and Rosemary – we highly recommend using fresh herbs here.  However, if you can’t find them fresh then dried will work great.
  • Sage – dried sage works great, or you can substitute about double the amount of chopped fresh.
  • Onions – we like to use yellow onions, but both white or red will work.
  • Carrots – these should be peeled and cut into 2” pieces.
  • Potatoes – we suggest using fingerling potatoes, red potatoes, yukon gold potatoes or a mix of all.  
  • Parsley – we like to use fresh parsley as a garnish, but this is completely optional.

How to Make Pork Tenderloin and Potatoes

  1. Prepare pork.  Spray a 9″ x 13″ baking dish with non-stick cooking spray. Unwrap the pork tenderloin and place it in the baking dish.  Use a paper towel to pat dry the pork tenderloin, then season with salt and pepper.
  2. Make the herb butter.  In a small bowl, combine the room temperature butter, garlic, thyme, rosemary, sage, and onion powder and use a fork to mash and combine all of the ingredients.  Using a spatula, spread this butter mixture evenly over the top of the pork tenderloin.
  3. Prepare veggies.  In a separate bowl, add the prepared onions, carrots, potatoes, avocado oil, and 1 teaspoon of reserved minced garlic.  Stir until well coated, then arrange the veggies around the edge of the pork in the baking dish.
  4. Roast.  Roast in a preheated 400 degree oven for 35-40 minutes, or until the thermometer reads 145 degrees F.   If the pork isn’t golden brown on top, broil in the oven for a minute or two until golden.  Once the pork has reached 145 degrees, remove from the oven and let rest for about 10 minutes before slicing and serving. 
  5. Serve.  To serve, spoon juices from the bottom of the baking dish over the meat.  Slice the pork into 1″ pieces, garnish with freshly chopped parsley and serve with some of the roasted vegetables and any other of your favorite sides.  Enjoy!

How long do you need to cook pork tenderloin in the oven at 400 degrees?

The cook times will vary depending on the size of the pork tenderloin and your own oven, but generally at 400 degrees, we have found that it takes about 90 minutes to roast 3 pounds of pork tenderloin.  Keep in mind you should always rely on the internal temperature and not the listed cook time when cooking meat! 

What temperature do you need to cook pork tenderloin to?

For pork tenderloin, the internal temp must reach 145 degrees F in order to be considered safe to eat.  If you aren’t using boneless pork, you want to be sure that your meat thermometer is not touching any bone.  It is ok if there is a little pink in the middle.

Can you cook pork tenderloin in the slow cooker?

Absolutely!  Any one of our slow cooker pork recipes would work great with pork tenderloin.

What’s the difference between pork tenderloin and pork loin?

These are actually two different cuts of meat and therefore need to be cooked differently.  Pork tenderloin comes from a muscle near the spine of the animal while pork loin comes from the ribs.  Since the tenderloin is an infrequently used muscle, this cut of pork becomes melt in your mouth tender and juicy when roasted.

Ingredients

  • pounds pork tenderloin, boneless
  • teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/3 cup butter, room temperature
  • 2 tablespoons garlic, minced (divided)
  • 2 teaspoons thyme, fresh minced
  • 2 teaspoons rosemary, fresh minced
  • 1/2 teaspoon dried sage
  • 1 teaspoon onion powder
  • 2 medium yellow onions, peeled and quartered
  • 3 whole carrots, peeled and cut into 2" pieces
  • 2 pounds red potatoes, (or yukon, fingerling)
  • 2 tablespoons avocado oil
  • 1 tablespoon parsley, fresh chopped for garnish

Instructions
 

  • Preheat oven to 400 degrees F.
