One of my favorite things about summer cooking is just how easy it is to throw something together and have it taste amazing. This recipe for peach salsa is a perfect example—fresh peach, tomato, red onion, jalapeno, cilantro, and lime juice. 

There isn’t even any seasoning involved (besides salt, obviously) because the ingredients do it all on their own. I do recommend letting this salsa sit for at least 10 minutes before serving so that the flavors and juices have a chance to mix together.

Feel free to experiment with using other herbs and fruits, adjusting the spiciness, or adding things like pickled red onions or bell peppers. You can serve this with tortilla chips, or try adding to your tacos, burgers, pitas, bruschetta, and so much more.

  • Peaches: in order to make sure that your peaches are perfectly ripe, I recommend buying them at least 2 days before you plan to make this recipe. That will give them a little time to ripen at home, making them as sweet and juicy as possible.
  • Tomato: I like how firm roma tomatoes are. They also tend to have less seeds inside, meaning there is more flesh to use per tomato.  
  • Red Onion: red onions are the perfect choice when they aren’t going to be cooked because they have a slightly sweet and nice crisp onion flavor.
  • Jalapeno: this adds a little heat to the sweet salsa. Feel free to add a little more or a little less, depending on how you like it.
  • Cilantro: cilantro gives the salsa a little freshness, bright color, and traditional salsa flavor.
  • Fresh Lime Juice: fresh always tastes far better than bottled lime juice!

How to Make Peach Salsa

  1. Mix the ingredients. In a large bowl, combine the diced peaches, tomato, red onion, jalapeno pepper, cilantro, lime juice, and salt. Mix gently until well-combined.

Frequently Asked Questions

Should you remove the peels from the peaches?

For this recipe, you don’t have to remove the peach skin. But, if you prefer to remove them, the easiest way is to blanch the peaches. Just cut a small “x” into the top of each peach, dip them into boiling water for a few seconds, then immediately remove the peaches and put them into an ice bath. This makes the skin easy to remove without damaging the peaches. 

If you do remove the skins, the peaches will be even more delicate so plan on eating the salsa the day you make it.

Can you make this ahead of time?

Yes! In fact, the flavors improve overnight because they have a chance to blend together. You can prepare this the night before and store in an airtight container in the fridge until the following day.

Recipe Variations

  • Add more fruit. If you want to mix up the fruit flavor, try using half mango, or adding another fruit like raspberries, strawberries, or pineapple.
  • Try different tomatoes. During the late summer months, there are so many different types of tomatoes to choose from. Experiment with using cherry tomatoes, beefsteak tomatoes, or other heirloom varieties.
  • Use more fresh herbs. Adding fresh basil and/or mint would taste great.
  • Add pickles. Instead of raw red onions, try adding pickled red onions, or even pickled jalapeno peppers.

  • Refrigerator: store leftover salsa in an airtight container in the fridge for up to 2 days.
  • Make-ahead: this can be made up to 24 hours in advance and store in the fridge.

Ingredients

  • 1 pound ripe peaches, cut into 1/2" chunks
  • 3/4 cup roma tomato, diced
  • 1/4 cup red onion, minced
  • 1 tablespoon jalapeno pepper, minced
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 1/2 teaspoon salt

Instructions
 

  • Wash and dry the peaches. Remove the pits and cut into ½-inch chunks, then add to a large mixing bowl along with the diced tomato, red onion, jalapeno pepper, cilantro, lime juice, and salt. Mix gently until well-combined.
  • For best flavor, let the salsa sit for 10–15 minutes before serving. You can also refrigerate for up to 24 hours. Serve with your favorite corn tortilla chips. Enjoy!

Storing leftovers: store the leftover peach salsa in an airtight container in the fridge for up to 2 days.
If you prefer less heat, remove the seeds from the jalapeño.
