- Prepare the melons. Cut or scoop each melon and add to a large serving bowl along with the sliced mint.
- Make the mojito glaze. In a small bowl, whisk together the olive oil, strawberry jam, lime zest, and lime juice.

- Serve. Drizzle the glaze over the melons and toss to coat. Serve chilled. Enjoy!
