- 1 pound ripe peaches cut into 1/2" chunks
- 3/4 cup roma tomato diced
- 1/4 cup red onion minced
- 1 tablespoon jalapeno pepper minced
- 1/4 cup cilantro chopped
- 1/4 cup lime juice
- 1/2 teaspoon salt
Wash and dry the peaches. Remove the pits and cut into ½-inch chunks, then add to a large mixing bowl along with the diced tomato, red onion, jalapeno pepper, cilantro, lime juice, and salt. Mix gently until well-combined.
For best flavor, let the salsa sit for 10–15 minutes before serving. You can also refrigerate for up to 24 hours. Serve with your favorite corn tortilla chips. Enjoy!
Storing leftovers: store the leftover peach salsa in an airtight container in the fridge for up to 2 days.
If you prefer less heat, remove the seeds from the jalapeño.
