Parmesan Crusted Potatoes Recipe

Some of my favorite recipes lately have been sheet pan dinners. They are easy to prep, the clean-up is super minimal, and they can typically be adjusted to fit whatever you have on hand or like the most. 

These crispy Parmesan cheese crusted potatoes are a sheet pan side dish, made by roasting potatoes on top of a thin bed of grated Parmesan cheese. As it cooks, the cheese forms a delicious crust over the potatoes, making them totally irresistible.

  • So quick and easy. The prep time on these potatoes is only about 5 minutes. The rest of the time is spent baking in the oven.

Key Ingredients You Will Need

  • Potatoes – I like to use potatoes that are on the smaller side for this recipe so that you can serve the full halves. Yukon gold or red potatoes are perfect for this. Russet potatoes will taste great, too. If they are too large, you can just cut the potatoes into smaller pieces.
  • Avocado Oil – avocado oil is perfect because it has a very high smoking point, meaning it won’t burn easily. It also has very little flavor so it won’t overpower the potatoes or cheese.
  • Parmesan cheese: use freshly grated Parmesan cheese for this recipe. It will crisp up and make the most perfect crust under the potatoes as they roast.
  • Toppings: serve these with any of your favorite baked potato toppings like shredded cheese, sour cream, bacon bits, and green onions or chives.

How to Make Cheese Crusted Potatoes

  1. Season the potatoes. Cut the potatoes in half, then rub with the avocado oil and season with salt.
  2. Add the Parmesan cheese to the baking sheet. Line a baking sheet with parchment paper, then spoon about 1 tablespoon of cheese per potato half onto it, spreading it out into a thin layer. Place the potato halves cut-side down on top of the cheese.

  1. Bake. Bake in a 400 degree oven for about 35-45 minutes, or until the potatoes are fork tender and the cheese is golden brown.
  2. Serve. Let the potatoes cool slightly, then serve with your favorite toppings.

Frequently Asked Questions

What kind of potatoes should I use?

When roasting potatoes like this, you want to choose ones that won’t take forever to cook, will hold their shape, and will taste good. A couple of my favorites are Yukon gold and red potatoes. Cut them in half, making sure they are all relatively the same size.

Why won’t the Parmesan crust stick to the potatoes?

Most often, the cheese crust isn’t sticking because you didn’t press it onto the potatoes firmly enough. Be sure to give it a nice press. You also need to make sure you aren’t using the pre-grated cheese from the grocery store. It doesn’t melt the same and is more apt to fall off of the potato.

Recipe Tips

  • Don’t overcrowd the pan! If you try to add too many potatoes at once, they will never crisp up. If you run out of space, just bake on two separate pans.
  • If you want extra fluffy potatoes, you can preboil them for about 15 minutes before roasting. 
  • Do not use pre-grated cheese! Make sure to either grate your own or purchase freshly grated cheese.

  • Storing leftovers: store leftovers potatoes in an airtight container in the fridge for up to 3 days.
  • To reheat: return potatoes to a baking sheet and reheat in a 350 degree oven for about 10 minutes, or until warmed through.

Ingredients

  • 2 pounds potatoes, Yukon Gold, russet or red potatoes
  • 2 tablespoons avocado oil
  • 1 teaspoon salt
  • 1/3 cup Parmesan cheese, grated

Toppings for Baked Potatoes

  • 1/2 cup shredded cheese
  • 1/4 cup sour cream
  • 1/4 cup bacon bits
  • 2 tablespoons green onions, sliced

Instructions
 

  • Preheat your oven to 400°F.
  • Line a baking sheet with parchment paper and set aside.
  • Wash and dry the potatoes, then cut them in half lengthwise. Drizzle the potatoes with avocado oil, then rub the avocado oil all over the potato and lightly sprinkle with salt.
  • On your prepared baking sheet, sprinkle about 1 tablespoon of grated Parmesan cheese for each potato half, spacing them apart so they don't touch.
  • Place each potato half cut side down directly on the Parmesan cheese, pressing gently so it sticks.
  • Bake for 35-45 minutes, or until the potatoes are fork tender and the cheese is golden brown and crispy.
  • Remove from the oven and let the potatoes cool for a few minutes. Carefully lift the potatoes from the pan and serve with your favorite potato toppings.
