These wedge salad wraps are a fun way to enjoy the classic salad—perfect for a brunch or a baby shower. I also love to make these for an easy lunch at home when I have leftover bacon from a big breakfast.

Just like wedge salad, these wraps are filled with iceberg lettuce, bacon, tomatoes, and blue cheese all wrapped up. This candied bacon recipe works perfectly in the recipe, as well as this hemp oil aioli. If you don’t have hemp oil around, it works great with blue cheese dressing, ranch dressing or pesto too!
Recipe Tips
- You can use regular tortillas, gluten-free tortillas, Naan bread, or my favorite, low carb tortillas.
- You can use pre-baked bacon or try this candied bacon recipe.
- Any type of lettuce works great. Romain is my favorite because it’s crunchy but just about any other kind works great too.
Key Ingredients
- Iceberg Lettuce: the crisp, refreshing bite of iceberg lettuce is a signature quality of a wedge salad, and there isn’t a great substitution. If you want to just turn this recipe into lettuce or spinach wraps, then you can obviously substitute whatever kind of greens that you would like!
- Bacon: either regular bacon or candied bacon work great.
- Dressing: you can go classic and use blue cheese dressing, or try my basil hemp aioli!
- Tortillas: flour tortillas work best for wraps. Sometimes you can also find flavored wraps, like spinach or tomato.

Wedge Salad Wrap Recipe
Ingredients
- 12 slices bacon
- 6 large flour tortillas
- 1/2 cup blue cheese dressing
- 2 cups iceberg lettuce, shredded
- 2-3 large tomatoes, sliced
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon balsamic vinegar
Instructions
- Heat a nonstick pan or skillet over medium heat, then add the bacon slices. Cook until brown—about 3-4 minutes—then flip over and cook until brown and crispy on the other side. Once the bacon has completely cooked, remove from the pan and transfer to a paper towel-lined plate to cool.
- Lay a flour tortilla on a flat surface and spread about 1 tablespoon of blue cheese dressing evenly across. Top with 2 slices of cooked bacon, about 1/3 cup of shredded lettuce, and 1-2 slices of tomato. Season with a little salt and black pepper, and finish with a drizzle of balsamic vinegar.
- To wrap, fold one side up about 1/3 of the way, then rotate 90 degrees and fold the wrap completely up. Place seam side down on a baking sheet or plate and store in the fridge until ready to serve. Enjoy!
