Do I Have to Use Red Potatoes?

Nope!  Although we love red potatoes (sometimes referred to as “new potatoes”), there are other great potatoes to use in this recipe.

  • Yukon Gold Potatoes are a great option because they aren’t too starchy or too waxy.  Plus, they have an amazing creamy texture.
  • Fingerling Potatoes– will turn out great.  You will often be able to find them in bags at the grocery store.  They are typically small enough that you may not even need to cut them.  
  • Russet Potato-You can also go with old trusty.   These will need to be cut into 1” cubes; otherwise, you can make the recipe exactly the same.  We prefer to keep the skin on, even though Russet potatoes have thicker skin.

Roasted Parmesan Red Potatoes Ingredients

  • Red Potatoes – leave the skins on, but be sure to wash them before cutting into quarters (or halves for smaller potatoes).  You could also substitute Yukon gold potatoes or fingerling potatoes. 
  • Avocado Oil – you’ll need some for coating the potatoes and some for greasing your baking sheet.  You can also use another type of cooking oil if you would like, such as olive oil or vegetable oil.
  • Spices – we like to use garlic powder, onion powder and Italian seasoning for this recipe.  You could also add in your favorite fresh or dried herbs.
  • Parmesan Cheese – freshly grated Parmesan cheese will work best.
  • Salt and Pepper

How to Make Roasted Red Potatoes with Parmesan

  1. Preheat the oven to 425 degrees.
  2. Place potatoes in a large bowl or a ziplock bag and drizzle them in 3 tablespoons of avocado oil. Toss the potatoes until evenly coated, then add the garlic powder, onion powder, Italian Seasoning, Parmesan cheese, salt and pepper.  Toss again until the potatoes are evenly coated.
  3. Grease a large baking sheet with another 3 tablespoons of avocado oil, spreading it evenly.  Remove potatoes from the bowl or ziplock bag onto the prepared baking sheet, squeezing out as much of the seasoning from the inside of the bag as possible.  Spread out the potatoes in a single layer on the baking sheet.
  4. Bake at 425 degrees for about 20 minutes, or until the edges of the potatoes begin to brown. Using a spatula, turn the potatoes and cook for another 15-20 minutes so the other side can brown.
  5. Once the potatoes are golden brown, remove from the oven and season with additional salt and pepper to taste. Serve immediately and enjoy!

Frequently Asked Questions

Can I Make roasted Parmesan potatoes ahead of time?

You can, but it’s best to make them fresh.  They are so simple to prep that you might as well!  If you want to reheat them properly, you will need to do so in the oven anyway so you might as well just make and eat them while they are super fresh.

How to reheat roasted potatoes?

If you do have leftovers to reheat, you can lay them in a single layer on a baking sheet and reheat at 400 degrees for about 15 minutes, or until warm and crispy again.

What Temperature Should I Bake Parmesan Roasted Red Potatoes At?

You want your oven to be super hot!  That’s why this recipe calls for roasting at 425 degrees.  
If you roast them too low, you’ll never get the nice crispy skin.  But, if you roast too high you risk burning the outsides of the potatoes before the insides ever get a chance to fully cook through.

Should I peel the potatoes before roasting them?

It’s not necessary to peel the red potatoes before roasting them. The skin adds a nice texture and flavor to the dish. Just make sure to wash the potatoes thoroughly before chopping them.

How should I store leftover parmesan roasted red potatoes?

If you have any leftovers, allow the potatoes to cool to room temperature, then transfer them to an airtight container and refrigerate. They should be consumed within 3-4 days for the best quality.

Tips for Making the Best Parmesan Red Potatoes

  • High heat.  We recommend 425 degrees.
  • Bake in a single layer.  If your potatoes are touching too closely, they’ll begin to steam and you won’t be able to get a nice roast on the potato skins.
  • Leave the skins on.  They add a ton of flavor and texture.
  • Cut into even pieces.  No two potatoes are exactly the same size!  Some of the smaller potatoes may only need to be cut in half instead of quartered, so use your best judgement.

Storing And Reheating

  • Refrigerator: store any leftover roasted potatoes in an airtight container in the fridge for up to 3 days.
  • To Reheat: you can reheat in a microwave or a preheated 350 degree oven for about 10 minutes until warm.  If you happen to have an air fryer, you can also toss them into there for a few minutes.

  • 6 tablespoons avocado oil, divided
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2/3 cup Parmesan cheese, (grated)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
