If you're a bundt cake lover, you've probably tried all about bundt cake. Well, let me tell you, all about bundt cake has nothing on this Coconut Filled Chocolate Bundt Cake.
Bundt Cake Recipe From Cake Mix
This recipe for Chocolate bundt cake is so rich and dense. The fact that it's a bundt cake from cake mix means it is so, so easy! There are only a few ingredients needed. You can make this recipe with or without the coconut filling but let me tell you, this coconut filling is to die for.
Back to the cake, this is definitely a really dense cake. It's thick and fudgy and definitely a moist chocolate cake.
Moist Bundt Cake Recipe
This is the same recipe as the normal sour cream chocolate chip bundt cake, with the chocolate chips removed. You can probably keep them in there if you have a very large bundt cake.
I have 2 bundt cake pans and they're both too small to have that much batter. With the added extra filling, adding the chocolate chips make the cakes spill over the edges.
If you're making this bundt cake recipe without the filling, use the chocolate chips. If you're making it with the coconut filling, hold off on the chocolate chips or use them as garnishment for the top of the bundt cake.

This coconut filling would be really yummy in a raspberry lemon bundt cake or even a lemon bundt cake too. The ingredients are pretty simple and make an almost an "Almond Joy" candy bar consistency.
Ingredients for Coconut Filling for Bundt Cake
- Cream Cheese- You can use full fat or part fat cream cheese in this recipe.
- White Chocolate Chips- You can also use milk chocolate chips for this recipe. I usually like to use white chocolate just because the colors are so dramatic and it truly is an almond joy cake. Coconut and chocolate is there a better combo!?!
- Coconut-Shredded- sweetened coconut works great.
- Almond Extract-This intensifies the flavor for sure.
- Coconut Extract- This will be sure to give your bundt cake the unmistakable coconut flavor we all love in this bundt cake recipe.
- Eggs- This will help give the coconut filling the right consistency. We want the coconut filling to be sturdy enough to keep it's shaping when the cake is cut.

How To Make Coconut Filling for Bundt Cakes:
- In a microwave-safe dish, add the cream cheese and the white chocolate chips. Melt for 20 seconds, stir, and heat for 20 more seconds. (You want the Chocolate chips to be mostly melted and the cream cheese to be easily spreadable) Repeat again if necessary.
- Add the shredded coconut, eggs, almond and coconut extract to the cream cheese mixture and stir.

How to Grease Your Cake Pan
To be sure the cake comes out of the pan clean and without chunks, be sure to grease the cake pan. I like to use butter or butter Crisco. Just add a tablespoon or so to a paper towel or napkin and cover the entire inside of the cake pan. Make sure all the little nooks and crannies of the pan are coated.
Now add about a ¼ cup of all-purpose flour to the cake pan. Turn the pan on its side and tap as the flour coats the butter. Now you can tell if you actually greased the entire pan. If you didn't, no worries. just get a little butter on your finder, coat the pan there and then flour it again. Be sure to dump out the excess flour and tap the pan gently to release any excess flour.
This will ensure your cake comes out of the pan beautifully and without taking chunks of cake.

How To Fill A Bundt Cake
This is the fun part. There's no magic here, just gravity. The filing is a little heavier than the cake batter. When the bundt cake is cooking, it will rise and the filling will fall a little in the pan.
After the chocolate cake batter is made, pour it into your greased and floured bundt cake pan. Smooth the top with a rubber spatula to ensure the batter is spread evenly and it cooks evenly.
Using a spoon, drop big spoonfuls of the batter into the top of the cake to make a ring. Try to get the filling about the same thickness and width all the way around the cake without touching the edges of the cake pan.
No need to push it down. As the cake bakes, the filling will sink into the batter and the batter will cover and cook up around the cake mix. Wah-lah, that's all folks, you now have a filled bundt cake.

How To Get Cake Out Of Bundt Pan
If you're wondering how to remove a cake from bundt pan, here are a few easy tricks and tips.
- Grease and flour your cake pan.
- Be sure your cake is cooked all the way through. ( I like to use the toothpick method. As you cake is cooking, when it looks baked, if your cake feels spongy on top, stick a toothpick in the center of the cake. Pull out the toothpick. If it is covered in batter, it's not finished cooking. If it has smears of chocolate, it's probably not finished cooking. If there are just a few crumbs, you're good to go.)
- Take the bundt cake out of the oven and let it cool for 15-20 minutes.
- Use a butter knife and gently pull the cake away from the pan if possible.
- Put a wire cookie cooling rack over the top of the cake. Using a towel or heat pads, flip the cake over. Gently wiggle pan or tap it on the counter to release the bundt cake.
- Pull the pan off. (If there are maybe some small chunks, use a rubber spatula to get them off the cake pan. Put them back on the cake if possible. Sometimes these are easy to hide with a little frosting or glaze on the cake.)

Ingredients in Bundt Cake From Cake Mix
- Cake Mix- I like to use the Betty Crocker Triple Chocolate Cake mix. It's thick and fudgy and has mini chocolate chips in it already.
- Sour Cream- Full fat sour cream
- Pudding-This will help give it that thick and fudgy consistency we all love.
- Butter-I like to use this instead of butter but cooking oil, canola, vegetable, and avocado oil all work great.
- Water- needed to thin out the chocolate batter a smidge.
- Chocolate Chips- You can add a cup of mini chocolate chips if you aren't adding the coconut filling. If you are adding the coconut filling, it's too much for your average bundt pan. It will overfill and either leave an extra ring of crust that spills over the cake pan or possibly drip on the bottom of your oven. Ewww. Omit the chocolate chips if you are filling the bundt cake.
How to make Bundt Cake From Cake Mix
This chocolate bundt cake recipe is one of the least finicky cake recipes. You basically just need to dump your ingredients in the kitchen Aide, scrape the sides down as you mix, use the beater attachment and beat for 2 minutes. Easy peasy.

Bundt Cake Glaze
There are a few fun options for bundt cake glaze. You can make a traditional glaze which I will include here or you can make a cream cheese frosting or even a chocolate ganache for your bundt cake topping.
Bundt Cake Glaze Ingredients
- Butter- Use salted butter. Just a little salt in something as sweet as frosting cuts the sweetness a bit and makes it even more delicious.
- Powdered Sugar- #10 sugar or powdered sugar works great.
- Milk- Whole milk or 2% works great. Even cream will work here.
- Almond Extract- extract will work great. It is the perfect pairing for coconut and chocolate flavors. You can also sub this for vanilla extract if you don't prefer almond flavoring.
How to make Bundt Cake Glaze
- In an electric mixer (using a hand-held mixer works great, too) add the butter and beat until light and fluffy.
- Add the powdered sugar, almond extract, and half of the milk. Beat until it's all mixed. Add milk a tablespoon at a time until desired consistency is reached.
You want your glaze to be as thick as possible and still able to get the drips you're looking for. When you lift the beaters up, you want the frosting to look melty, You don't want it to keep its shape...but just barely. There is a sweet spot you're looking for here. You want it to be as thick as possible but also melty.
I can't give you exact instructions on how much milk to add. The consistency depends on how cool the butter is and how dense the powdered sugar is. Just look for the visual clues to get the right consistency for the drip we all love on bundt cakes.
Once you've got the frosting, how you want it. Add it to a cake decorating bag. I added a rather large round tip but you can also just add the frosting to the bag and cut the tip off the bag.
Make a rough outline of where you want the frosting to drip. On the sides of the bundt cake where the cake indents is a good place to start.
Now fill in the top of the cake and up to the drips too.
I found that I was able to lift the cake off the counter about an inch and lightly tap it. The frosting filled in, and looked like the cake was dipped into the glaze. So beautiful.
Even if your drips don't turn out perfect, it's still going to be beautiful. Add some mini chocolate chips or some toasted coconut for garnish.

Coconut Filled Chocolate Bundt Cake
Ingredients
Chocolate Bundt Cake
- pkg Cake Mix Betty Crocker Triple Chocolate works great
- 1 small box Pudding instant chocolate pudding
- 1 cup Sour Cream
- ½ cup Butter or cooking oil
- ½ cup Water
- 2 large Eggs
- 1 cup Chocolate Chips Add the mini chocolate chips if you're not filling the cake. If you're filling the cake, the chocolate chips add too much volume to the bake batter and the cake will spill over the cake pan.
Coconut Filling for Bundt Cake
- 1 8 oz Cream Cheese Full fat or part-skim work great
- 1 12 oz White Chocolate Chips You can use milk Chocolate Chips if preferred
- 1 ½ cup Coconut Shredded, sweetened
- 2 large Eggs
- ½ teaspoon Almond Extract
- ½ teaspoon Coconut Extract
Glaze for Bundt Cake
- 4 Tablespoons Butter
- 2 cups Powdered Sugar
- 3-5 Tablespoons Milk
- 1 tsp Almond Extract You can also use vanilla for this if you don't prefer almond.
Garnishment for Bundt Cake
- ½ cup Toasted Coconut or mini Chocolate Chips for garnishment
Instructions
- Preheat oven to 350 degrees
How To Prepare Cake Pan

If you're filling the cake, the chocolate chips add too much volume to the bake batter and the cake will spill over the cake pan.) Scrap the sides down while mixing and mix for 2 minutes. Pour into a greased bundt cake pan.
How to Make Coconut Filling

I read and re-read this recipe and I can't find the temperature setting for the oven or how long to bake this cake. I am going to use the temp setting and time on the cake mix box this time. I hope it turns out OK.
